Coconut-cocoa fat bomb-truffles
Ingredients:
1 can of full-fat coconut milk
• 2x150 g of coconut flakes
• 4 tablespoons of cocoa powder
• Handful of nuts (optional)
• Sweetener of choice (I used erythritol)
• 1 tbsp of coconut butter or coconut oil
Optional:
• Coconut flakes, melted chocolate // coconut oil-cocoa powder mixture, chopped nuts etc.
Instructions:
Add all your ingredients into a high-speed blender or food processor and give it a 10-15 seconds max a good spin so that all the ingredients would mix and the nuts are crushed into smaller pieces.
Place a parchment in a tin or pan and pour the mixture over the paper.
Spread and let it freeze until a bit more firm.
Roll the balls out of the dough and cover with your optional toppings.
Keep in an airtight container in fridge for a week or up to one month in deep-freeze.
Just ate the last of my five layer fat bombs.
Dark chocolate/ cashew butter / Blackberry jelly / white chocolate / dark chocolate. Each layer selfmade and keto, and/or low carb.
Now I have space in the fridge for a new experiment. Going to try something new the next days.

Just call me Susie Homemaker! Love love love weekends at home. There was a lot of picking up around the house, laundry, reading and hanging out with my cat as well as fun kitchen experimentation!
Not only did I make the cheesecake fat bombs like promised (boo on me for not picking up any macadamia nuts!), but I also made this 3-seed bread I saw a week or so ago online. Totally dense but tasted way better than I expected it to. Very hearty and a great palette for butter :)
Then, for dinner, I made some chicken tenders and summer salad. Light, moist, and flavorful! As you can see we sure like our sauce options ;)
Tonight is going to be a low carb struggle as we’re going out to a house party. I want to help curb the drinkage of beer (ie carbs) by bringing our own vodka and flavored water drinks. Obviously, the best low carb option would be to drink water but ppssshhh on that. This is what klean kanteens were made for. Here’s hoping I can whip up some tasty cocktails for us to sip on tonight to avoid other carby temptations!
