Hassleback potatoes are a delicious and visually appealing side dish that pairs perfectly with pork tenderloin dinner. The thin slices allow for crispy edges while keeping the inside creamy and tender. They're easy to make and elevate any meal.
Ingredients: 4 medium-sized potatoes. 4 tablespoons melted butter. 4 cloves garlic, minced. 4 sprigs fresh thyme. Salt and pepper to taste. Grated Parmesan cheese optional. Chopped parsley for garnish optional.
Instructions: Warm the oven up to 425F 220C. Clean the potatoes and pat them dry. Make sure not to cut all the way through each potato when you slice it. Space the slices about inch apart. You can keep from cutting all the way through the potato by putting chopsticks or wooden spoons on each side. Melt the butter and add the garlic and thyme leaves. Let the potatoes soak up a lot of the butter mixture. Make sure to get between the slices. Add salt and pepper to the potatoes. Put the potatoes on a baking sheet that has parchment paper on it. When the potatoes are done, they should be crispy on the outside and soft on the inside. No need to: During the last 10 minutes of baking, add grated Parmesan cheese to the potatoes to make them taste even better. If you want, you can add chopped parsley as a garnish before serving.
