Ingredients: 2 green plantains. 2 tablespoons coconut oil. Salt to taste. 2 ripe avocados. 1 small red onion, finely diced. 1 tomato, diced. 1 jalapeo pepper, seeded and finely chopped. Juice of 1 lime. 2 tablespoons fresh cilantro, chopped. Salt and pepper to taste.
Instructions: Set oven temperature to 375F 190C. Using a sharp knife or mandoline slicer, peel and thinly slice the plantains. Coat the plantain slices thoroughly in coconut oil by tossing them in a bowl. Place the plantain slices on a baking sheet covered with parchment paper so that they are in a single layer. Season the plantain slices with salt. Bake, rotating halfway through, in a preheated oven for 15 to 20 minutes, or until golden brown and crispy. Make the guacamole while the plantain chips are baking. Using a fork, mash the avocados until smooth in a medium-sized bowl. To the mashed avocado, add diced red onion, diced tomato, chopped jalapeo, lime juice, and cilantro. Add salt and pepper for seasoning, then stir until thoroughly mixed. After cooking, take the plantain chips out of the oven and allow them to cool slightly. Present the guacamole alongside the plantain chips. Have fun!
