I made my first omelette with all my new kosher stuff on my newly kashered stovetop!! Each step towards stricter kashrut has brought me greater consciousness of food. Blessing food both before and after eating forces me to stop my day to appreciate what I'm eating. Which blessing to say? How high from the ground did these blueberries grow? Kashering my kitchen meant I had to wait a while before I could use it; I couldn't just move in and start cooking. Every aspect of this kosher kitchen process has slowed me down and had me asking where my food comes from, how it was processed, and what it comes in contact with on its journey to my plate. Environmentalism asks similar questions, just in a different way. The whole concept of farm to table entails greater consciousness of food choices, knowledge of where our food comes from, and a heightened appreciation for food. The questions asked are simply different: Were pesticides involved in the production of these blueberries? How far did they travel to reach my plate? The search for kosher vegetarian food on the go might be difficult, but with my own kitchen I have more control and awareness over my food choices and an enhanced appreciation for every bite. I love not having to buy two sets of everything or count hours - I only eat dairy, so for once my environmentalism and vegetarianism actually make my Judaism easier.

Beet leaves are underrated. I bought some beets at a farm stand and didn’t realize how big the leaves are. I’ve been using them as base for salads all week. Like spinach with a hint of beet. I added some beans, onions, basil, and goat cheese for the most amazing preshabbos meal ever. Basil from the same farm, where I volunteered that day. I can truly feel the rest of shabbat descending on me.
