Healthy Muesli Slice.
Easy snack thats choc full of protein, fibre & good fats. Gluten, dairy & preservative free!
You will need:
2 cups of oats
2 tablespoons of sunflower seeds
2 tablespoons of sultanas
2 tablespoons of pepitas
2 tablespoons of shredded or shaved coconut
1 tablespoon of sesame seeds
1/2 cup of chopped nuts {I used pecans, walnuts, almonds & cashews}
2 eggs
1/2 cup brown rice flour {can use gluten free flour or wholemeal flour}
1 tablespoon organic honey
1 tablespoon organic maple syrup
2 tablespoons coconut oil
Mix altogether in a large bowl and place into lined baking tray. Flatten mixture with spoon or spatula & cook for approx. 10mins in a preheated oven at 180 degrees.
{Tip from my Nanny - Cut any sort of slice while its still hot. Prevents crumbling when its cool.}
