Elderberry soup with apple slices and semolina dumplings
This sweet autumn and winter dish has its origin in Northern Germany and Denmark and is also part of the Pomeranian, Saxonian and Vogtland kitchen (Vogtland is the region around the westernmost corner of Czechia).
For the soup:
1 kg of fresh, ripe elderberries
3 to 4 apples, peeled and sliced
1 to 2 tablespoons of starch
200 g sugar
1 to 2 teaspoons of vanilla sugar
a pinch of salt
powdered cinnamon
juice of 1 to 2 lemons
Remove elderberries from the umbel / stems using a fork and out them in a pot. Add water and lemon juice until the berries are just covered and boil with a pinch of salt until the berries are soft. Sieve the juice and add the apple slices and the sugar. Boil until the apples are soft (they will take up the berry colour and become quite black). While still bioloig, add starch until the liquid becomes a little thick. Add vanilla sugar and cinnamon to taste.
For the dumplings:
250 mL of milk
50 g butter
2 tablespoons of sugar
100 g semolina (from durum wheat)
2 egg yolks
a pinch of salt
Bring milk, butter, sugar, and a pinch of salt to a boil. While boiling, stir in the semolina. Reduce the heat and let condense under constant stirring until a white film forms at the bottom of the pot. Immediately remove the pot from the heat source and let cool down a bit. Stir in the two egg yolks. Cut out small portions from the semolina mass and form little dumplings between two tablespoons. Cook for five minutes in simmering water with a pinch of salt.
Serve the elderberry soup hot or cold in a soup dish and set a few dumplings on top.
