Ingredients: 4 pork chops. 4 slices of bacon. 1 tablespoon olive oil. 1 small onion, finely chopped. 2 cloves garlic, minced. 1 cup heavy cream. 1 lemon, zest and juice. 1 tablespoon fresh thyme leaves. Salt and pepper, to taste. 2 tablespoons chopped fresh parsley for garnish.
Instructions: Season the pork chops with salt and pepper on both sides. In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet, crumble it, and set it aside. In the same skillet, add olive oil and sear the pork chops for 4-5 minutes on each side or until they reach your desired level of doneness. Remove them from the skillet and set them aside. In the same skillet, add the chopped onion and cook until it becomes translucent, about 3 minutes. Add the minced garlic and cook for another 30 seconds until fragrant.
