Start your day off right with a tasty take on regular pizza. This Hungry Girl Pepperoni Breakfast Pizza combines classic pizza flavors with breakfast foods to make a filling and protein-rich breakfast.
Ingredients: 1 pre-baked whole wheat pizza crust. 1/4 cup marinara sauce. 1/2 cup shredded part-skim mozzarella cheese. 1/4 cup sliced turkey pepperoni. 4 large eggs. 1/4 cup diced red bell pepper. 1/4 cup diced green bell pepper. 1/4 cup diced onion. Salt and pepper to taste. Cooking spray.
Instructions: Preheat your oven to 375F 190C. Place the pre-baked whole wheat pizza crust on a pizza stone or baking sheet. Spread the marinara sauce evenly over the pizza crust. Sprinkle the shredded mozzarella cheese on top of the sauce. Evenly distribute the turkey pepperoni slices over the cheese. In a small bowl, whisk together the eggs, diced red bell pepper, diced green bell pepper, diced onion, and a pinch of salt and pepper. Pour the egg mixture evenly over the pizza. Bake in the preheated oven for 15-20 minutes, or until the eggs are set and the crust is golden brown. Remove from the oven and let it cool slightly before slicing.
