DID YOU KNOW? Menopause and breast cancer contribute to a loss of bone density and osteoporosis? Lifting weights is extremely important in helping to aid keeping bones strong by keeping the muscles strong!
Here is our Thursday morning weight training class - just a bunch of breast cancer survivors workin their butts off to keep those muscles and bones strong! WARRIORS!
we’re back from a 3-day holiday weekend and we know how that can go...it’s rough! but getting back into a steady workout is SO important! zumba, weight lifting, yoga - whatever you enjoy - just get moving!
Paula's Delicious Chicken Lettuce Tacos!
Serves 4-6
What you'll need: 1 head of iceburg lettuce 2 lbs. ground chicken breast (preferably hormone free) 1 1/2 cups pre-sliced mushrooms 1 cup snow peas 1 bunch scallions 1 small can of whole water chestnuts 1/4 cup dry roasted unsalted peanuts 1/4 cup low sodium soy sauce 1/2 tsp toasted sesame seeds 1/2 tsp crushed ginger 2 cloves garlic cooking spray optional: packaged peanut sauce or hot sauce for dipping
Directions: 1. Finely chop mushrooms, snow peas, scallions, and water chestnuts, and crush the peanuts. 2. Spray large skillet with cooking oil and place on stove (medium to high flame). 3. Add garlic and ginger, cook for about 30 seconds. 4. Add chicken to skillet and stir until cooked through. 5. Add all vegetables, soy sauce, sesame seeds, and salt and pepper to taste. 6. Cook until vegetables are heated through but not soggy. 7. Wash lettuce wraps. 8. Place desired amount in lettuce leaf, sprinkle with peanuts and wrap like a taco. 9. Enjoy!
* can substitute chicken with turkey or tofu!
we had a few questions about where to purchase the EAS protein powder and bars - Jen just received her haul from Amazon (cheapest place as well). Also, feel free to throw in some berries or half a banana for added sweetness or a handful of greens to up your nutrition density for only a few extra calories!
