It’s hard for me to eat enough green salads in the winter months. On top of that I saw something on Instagram about trying to eat 30 different fruits and vegetables in one week. I know I lack a good amount of fruits and veggies this time of year. Last night I had bunco here and I made this main course salad. This is one of my favorite salads, it’s so tasty and filling. I forgot to take a picture. And I added a few extra veggies to it. So last night I got these fruits and veggies in my dinner.

Baby green lettuce, corn, purple onion, carrots, tomatoes, blueberries, avocado and basil. I ate leftovers for lunch. For dinner we’re having sausages and I’m roasting asparagus, broccoli, peppers and onions. So I figure I’m getting about 10 different veggies/fruits today. If only I could do that every day!
