Ingredients: 2 cups kale leaves, chopped. 1 boneless, skinless chicken breast, grilled and sliced. 1 apple, thinly sliced. 1/4 cup red onion, thinly sliced. 1/4 cup feta cheese, crumbled. 1/4 cup toasted pecans, chopped. 2 tablespoons olive oil. 1 tablespoon balsamic vinegar. Salt and pepper to taste.
Instructions: First, grill the chicken breast for about 15 to 20 minutes, or until it's fully cooked. Cut it into very thin strips. Put the chopped kale, apple slices, red onion, feta cheese, and toasted pecans in a large bowl. To make the dressing, mix the olive oil and balsamic vinegar in a small bowl with a whisk. Add pepper and salt to taste. Pour the dressing over the salad, then toss it all together to cover everything evenly. Spread the salad out on plates or bowls, and then add a few grilled chicken slices to each one. Serve your tasty Kale Chicken and Apple Salad right away and enjoy it!
