Aginares Me Koukia is a traditional Greek dish combining the earthy flavors of artichokes and fava beans. This savory recipe, inspired by SAVEUR, showcases the freshness of the ingredients with a touch of Mediterranean flair.
Ingredients: 1 lb fresh or frozen artichoke hearts. 1 lb fresh or frozen fava beans, peeled. 1/2 cup extra virgin olive oil. 1 onion, finely chopped. 2 cloves garlic, minced. 1 cup diced tomatoes. 1/2 cup vegetable broth. 1/4 cup chopped fresh parsley. Salt and pepper to taste. 1 lemon, juiced.
Instructions: Heat the olive oil in a big skillet over medium heat. When the onions are translucent, add them chopped and saut. Add the minced garlic and stir until it becomes aromatic. Saute the fava beans and artichoke hearts for five minutes. Add the chopped tomatoes and vegetable stock, and thoroughly mix. To taste, add salt and pepper for seasoning. Vegetables should be simmered covered for 15 to 20 minutes on low heat, or until soft. Before serving, top the dish with chopped parsley and squeeze some lemon juice over it.
