Mixed vegetables with peanuts and yogurt for dressing
I am soooo excited to make something new especially when cooking because I want to cook a healthy food (for myself ofcourse) and for my diet plan (I dont know this works or not but never mind).
So over the last 2 months since I started cooking vegetables with the same ingredients (which is so boring with this stuff) because I scoured many healthy cooking websites and recipes but it was too hard to follow. So I made some easy things with the materials available in my fridge.
Well, I am very pleased to learn and curious try something new while cooking (maybe I will go to a cooking class later) and I really want to share what I made with you guys, even if its so usual or kind of boring. But for a beginner like me, I am so excited.
My salad ingredients is actually the same as the previous post just different plating and a little stuff on it. So here the recipe for you guys.
Ingredients :
2 Potatoes (cut into small piece)
1 ounch baby spinach
1 corn (cut into small piece)
1 cup of green beans (cut into small piece)
½ tomato (cut into small piece)
1 garlic (chopped)
1 tsp oregano
1 tbsp oil (olive oil or vegetable oil)
1 tablespoon plain yogurt (for dressing)
Salt and pepper
Peanuts
Directions:
Boil water and salt to taste. Put the potato and corn first. Boil for 2 minutes. Then put the beans and boil all for 1 or 2 minutes. Lift and drain then move to ice water in another cup (to keep the color nice).
Cut potatoes into 6 parts (based on the taste), add chopped garlic, 1 tsp oregano and 1sdm of oil, mix and then marinade for 1 minute. Do the same way for ¼ tomato have been cut.
Heat the pan and roast potatoes for 3 minutes. Put the tomatoes that have been marinated (in the other side), leave for 1 minute cover with a lid.
Boil the spinach for 10 seconds, remove and drain then move into ice water for 10 seconds then remove and drain.
Marinade ½ ounch spinach with garlic like step 2. Then put into pan (other side of pan). Stir all and cook for 1 minute.
Put the corn, green beans and fresh tomatoes that have been cut into a small bowls.
Pour the stir-fry over fresh vegetables, put ½ fresh spinach on top.
Seasoning with salt and pepper to taste.
Add peanuts and plain yogurt on top.
Mixed veggie is ready to serve.
