Soft Scrambled Eggs recipe Ingredients 4 eggs 1/2 tablespoon butter salt and pepper to taste Directions 1. Melt the butter in a non-stick skillet over low heat. The butter to should coat the whole pan. 2. Whisk the eggs in a medium mixing bowl. 3.When the butter begins to bubble add the eggs to the pan directly in the center so that the butter gets pushed out to the sides. 4. swipe a spatula around in small circles in the pan don’t forget the the edges of the pan to create large soft curds. Don’t flip the curds over. 5. Once eggs begin to set switch to just gently pushing/folding the liquid eggs to form curds. The entire process should take 2-3 minutes or less. 6. When you have some big folds of soft scrambled eggs remove from heat. Residual heat from pan will continue to cook eggs.
