These Spinach, Mung Bean, and Millet Burgers are a healthy and delicious vegetarian option packed with protein and nutrients. They are perfect for a meatless burger night!
Ingredients: 1 cup cooked mung beans. 1/2 cup cooked millet. 1 cup chopped spinach, cooked and drained. 1/2 cup breadcrumbs. 1/4 cup grated Parmesan cheese. 1/4 cup finely chopped onion. 1 clove garlic, minced. 1 egg. 1 tsp ground cumin. 1/2 tsp paprika. Salt and pepper to taste. 2 tbsp olive oil. 4 whole wheat burger buns.
Instructions: Add the breadcrumbs, Parmesan cheese, chopped onion, minced garlic, egg, ground cumin, paprika, salt, and pepper to a large bowl. Mix the cooked mung beans, millet, spinach, and breadcrumbs together. Well mix the ingredients together until they are all well mixed. Split the mixture in half and shape each half into a burger patty. In a pan, heat the olive oil over medium-high heat. Put the burger patties in the pan. Cook them for four to five minutes on each side, or until they are golden brown and done. In a skillet or toaster, toast the whole wheat burger buns until they are just barely browned. To put together your burgers, put each patty inside a toasted bun. Add the toppings and sauces that you like best. Enjoy the Spinach, Mung Bean, and Millet Burgers while they're still hot!
