8. Pasta Verde (To Celebrate Spring, Goddammit)
These pasta are filled with Spring green vegetables: peas, asparagus, whatever you want to add to the mix, and the good thing? You can do it all year long with frozen veggies if you so choose!!
Plus, I added some salmon to have a complete dish, but you really don’t have to ;)

I never thought asparagus was worth growing given this effort of time investment they take, but the taste of these fresh homegrown stalks were incomparably good! Also the amazing this is, these didn’t make my pee smell weird...sorry tmi?
Chicken Nuggets with Delusions of Grandeur and Spring Veggies
Toss teeny thin baby asparagus with olive oil, salt and garlic powder. Broil until just slightly charred. Set aside to cool.
Cut carrot and broccolini stems into small circles, microwave until just cooked. Set aside.
Whisk some white wine, onion powder, Dijon mustard, dried thyme, salt, and pepper to taste in a bowl. Whisk in some olive oil in a slow, steady stream until emulsified. Set aside.
Cut chicken breast into bite size chunks. Dredge in a mixture of flour/salt/thyme/onion powder. Pan fry until just cooked through. (Set few pieces aside for the sauce/veggie -phobic member of your family who is having plain whole carrots for their veg tonight because life's too short to argue about this sort of thing and more saucy veggies for me anyway.)
Put the veggies into the pan with the chicken, drizzle the sauce over everything, toss to coat. Adjust seasonings. Add a splash more wine (or water or stock) if needed to glaze everything nicely, or a little flour if you need to thicken it. (If you do, let it simmer for a minute to cook the starch and thicken the sauce.) Take off the heat. Add a teaspoon margarine (or butter) and stir. Plate, and then drizzle balsamic syrup over it.
Remember to take a photo next time. Because this looked like restaurant food, and tasted like it too.
