This vibrant quinoa salad is bursting with fresh flavors of spring vegetables and herbs. It's gluten-free and perfect for a light and nutritious meal or side dish.
Ingredients: 1 cup quinoa, rinsed. 2 cups water. 1 cup cherry tomatoes, halved. 1 cup cucumber, diced. 1/2 cup red bell pepper, diced. 1/4 cup red onion, finely chopped. 1/4 cup fresh parsley, chopped. 1/4 cup fresh mint, chopped. Juice of 1 lemon. 2 tablespoons olive oil. Salt and pepper to taste.
Instructions: In a medium saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low and simmer covered for 15 minutes or until water is absorbed and quinoa is tender. Remove from heat and let it cool. In a large bowl, combine cooked quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, parsley, and mint. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper. Pour over the quinoa salad and toss to combine. Serve immediately or chill in the refrigerator for a couple of hours before serving.

Ingredients: 1 lb asparagus, trimmed and chopped. 1 cup peas, fresh or frozen. 1 small onion, diced. 2 cloves garlic, minced. 4 cups vegetable broth. 1 cup spinach leaves. 1 tablespoon olive oil. Salt and pepper to taste.
Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, saut until softened. Add asparagus and peas, cook for 2 minutes. Pour in vegetable broth, bring to a boil, then simmer for 15 minutes. Stir in spinach leaves and cook until wilted. Use an immersion blender to puree the soup until smooth. Season with salt and pepper to taste. Serve hot, garnished with additional peas and a drizzle of olive oil.
