This Roasted Squash with Chile Greek Yogurt Sauce is a delicious and healthy dish with a perfect balance of flavors. The creamy yogurt sauce with a hint of chili adds a delightful twist to roasted squash. It's a great side dish or even a light meal option.
Ingredients: 1 medium-sized squash, peeled and diced. 2 tablespoons olive oil. Salt and pepper to taste. 1 cup Greek yogurt. 1 tablespoon tahini. 1 tablespoon lemon juice. 1 clove garlic, minced. 1 teaspoon chili powder. 1/2 teaspoon paprika. 1/4 teaspoon cayenne pepper. Fresh cilantro leaves for garnish.
Instructions: Start by heating the oven to 400F 200C. Put the diced squash in a bowl and add the olive oil, salt, and pepper. Toss the squash until it is well covered. Place the squash in a single layer on a baking sheet. Roast in a preheated oven for 25 to 30 minutes, or until soft and slightly browned. Flip the squash over halfway through the cooking time. Make the Greek yogurt sauce while the squash is roasting. In a different bowl, mix the tahini, lemon juice, garlic that has been minced, chili powder, paprika, and cayenne pepper. Make the seasonings taste better. While the squash is still a little warm, take it out of the oven and let it cool down a bit. Add a lot of the Chile Greek yogurt sauce to the roasted squash and serve it with fresh cilantro leaves on top. Have fun with your roasted squash and chili Greek yogurt sauce!
