This delicious Yellow Squash Casserole is a creamy and cheesy side dish that's perfect for family gatherings or weeknight dinners. The combination of sautéed squash, cheddar cheese, and a crispy cracker topping makes it a crowd-pleaser.
Ingredients: 4 cups sliced yellow squash. 1/2 cup chopped onion. 2 tablespoons butter. 1 cup shredded cheddar cheese. 2 eggs, beaten. 1/4 cup milk. 1/4 cup sour cream. 1/2 cup crushed buttery crackers. Salt and pepper to taste. 1/4 teaspoon paprika.
Instructions: Start by heating the oven to 350F 175C. Add the yellow squash slices and onion pieces to a large skillet. Add the butter and cook for about 5 minutes, or until the vegetables are soft. Put the sauted onion and squash in a bowl. Add the shredded cheddar cheese, beaten eggs, milk, and sour cream. Combine well. Add salt and pepper to taste to the mixture, and then put it in a casserole dish that has been greased. Crush the buttery crackers and mix them with the paprika in a different bowl. Then, sprinkle this mixture evenly on top of the casserole. The casserole should be baked in a hot oven for 25 to 30 minutes, or until it is golden brown and set. Enjoy while hot!
