1 lb lean ground turkey (or chicken) 🍗

1 cup black beans, drained & rinsed
1 cup diced tomatoes (or salsa) 🍅
1 cup cauliflower rice (or regular rice for more carbs)
1/2 cup low-fat shredded cheese 🧀
1/2 cup plain Greek yogurt (instead of sour cream)
1/2 cup lettuce, shredded 🥬
Optional toppings: avocado, jalapeños, cilantro
Instructions:
Preheat oven to 375°F (190°C).
Brown turkey in a skillet, drain fat, then stir in taco seasoning + 1/4 cup water.
Layer in a casserole dish: cauliflower rice, turkey, black beans, tomatoes, and half the cheese.
Bake 15-20 mins until bubbly, then top with remaining cheese & broil 2 mins.
