Del Monte Stewed Tomatoes, 1961
Tequila Chili
6 to 8 servings
This dish features chili made with tequila. It only requires one pot and is tasty and filling. Serve with crackers and a salad.
Ingredients
1 pound chuck ground beef
1 (14.5 ounce) can Italian stewed tomatoes, chopped
1 (15 ounce) can red kidney beans, drained and rinsed
1 (8 ounce) can tomato sauce
1 cup of onion, chopped
1 teaspoon garlic cloves, minced
3 tablespoons tequila
1 tablespoon chili powder
1 ½ teaspoons ground cumin
1 teaspoon salt
Directions
In a large pot over medium heat cook the ground beef until the beef is well crumbled and is no longer pink. Drain the excess fat. Then add the stewed tomatoes that have been chopped, kidney beans, tomato sauce, chopped onion, minced garlic, tequila and spices. Simmer for about 25 minutes. Stir from time to time to keep the chili from sticking to the pan. The alcohol in the tequila should cook off making it suitable for the whole family to enjoy.
Serve with shredded cheddar cheese, sour cream or with other toppings that you like.
Notes
You can modify this recipe to your own tastes. You can substitute ground turkey for the beef. To make it spicier you can add chili peppers or cayenne pepper. Add additional ingredients that you like such as chopped green peppers or sliced mushrooms.
Queso nacho bar.
Tortilla chips (1 bag), American cheese (1 ¾ pounds), Fontina cheese (16 ounces), Half & half (16 ounces), Jalapeno (3), Cilantro (½ bunch), Nutmeg (dash), Chicken (2 breasts), Chipotle powder (dash), Salt & pepper (dash), Sour cream (10 ounces), Adobo seasoning (dash), Corn (2), Cilantro (1 bunch), Jalapeno (3), Stewed tomatoes (14 ounces), Corn (14 oz), chic peas (14 oz), Vidalia onion (1/4).
Make beans & corn: sauté onions add corn and drained chic peas; season with adobo seasoning. Make sour cream: mix sour cream with adobo seasoning. Make salsa: puree stewed tomatoes with cilantro, jalapeno & salt. Make corn: shuck and place on open flame on all four sides until it begins to brown, then cut corn off cob. Make Cheese: American and fontina in a double boiler with half and half and nutmeg. Add cilantro & minced garlic. Make chicken: Season with salt, pepper & ancho chili powder and sear in pan. Cut into small pieces and return to pan until fully cooked. Add all ingredients to top of tortilla chips.
Tomato Sauce.
Crushed Tomatoes (56 oz.), Whole tomatoes (28 oz.), Stewed Tomatoes (14 oz.), Kosher salt (Dash), Black Pepper (Dash), Garlic (4 cloves), Vidalia onion (1/4), Olive oil (1/4 cup).
Chop onion & garlic and sauté in olive oil. Add tomatoes and bring to boil, then reduce to simmer. Season with salt & pepper. Pulse with food processor. Simmer for 1 hour, then let sit in fridge for 8-20 hours.
Spicy Shrimp Etouffe. Shrimp (2 pounds), Red Bell Pepper (1), Jalapeno (1), Vidalia Onion (1/4), Garlic (3-4 cloves), Thyme (1 tablespoon), Chicken stock (2 cups), Water (1 cup), Kosher salt (dash), Pepper (dash), Cayenne (dash), Butter (5 tablespoons), Flour (5 tablespoons), Olive oil (1 tablespoon), Stewed tomatoes (14 oz.).
Peel shrimp and reserve shells. Sautee shells in 1 tablespoon butter until pink. Add water and chicken stock and bring to boil. Simmer on low for 15 minutes then remove shells. Season broth with salt, pepper & cayenne. Finely dice peppers, onion, garlic and thyme and then sauté in olive oil in cast iron pan. When translucent, add 4 tablespoons of butter, flour, salt, pepper, and cayenne and stir. Add broth to vegetables and flour and stir until thick. Add tomatoes and shrimp and cook until shrimp are pink. Serve with rice and hot sauce.
Stewed Tomatoes. Tomatoes (10), Celery (¼ cup), Onion (¼ cup), Green bell pepper (¼ cup), Olive oil (1-2 tablespoons), Fresh Oregano (1 teasoon), Kosher salt (dash), Black pepper (dash), White sugar (dash).
Chop onion, pepper, and celery and gently sautee in olive oil. Drop tomatoes into boiling water for 30 seconds, then ice water for 10 seconds. Remove skin and simmer for 30 minutes with pepper onion and celery. Season with salt, pepper, and sugar.
Fried hot peppers. Hot chili peppers (1 lbs.), Olive oil (¼ cup), Garlic (3-4 cloves), Kosher salt (dash), Stewed tomatoes (14 oz.).
Cut stem off pepper and sautee with garlic in olive oil until peppers begin to brown. Add slightly drained tomatoes and simmer. Season with salt.
Salsa display (pineapple salsa, guacamole, pico de gallo, and roasted garlic and stewed tomato salsa).
Pineapple Salsa. Pineapple (1), Cilantro (2-3 tablespoons), Jalapeno (1). Cut pineapple into small dices. Mince jalapeno and cilantro and mx together with pineapple.
Pico de Gallo. Tomatoes (12), Cilantro (1 bunch), Lime (2), Jalapeno (2), Garlic (4-5 cloves), Kosher salt (dash). Cut tomatoes into small dices. Mince jalapeno, cilantro and garlic. Mix with tomatoes, salt & lime juice.
Guacamole. Avocado (24 oz.), Tomatoes (3), Cilantro (1 bunch), Lime (4), Jalapeno (2), Garlic (4-5 cloves), Kosher salt (dash). Cut tomatoes into small dices. Mince jalapeno, cilantro and garlic. Mix with tomatoes, salt & lime juice. Fold into avocado, top with sliced limes.
Roasted garlic & stewed tomato salsa. Stewed tomatoes (36 oz.), Cilantro (2-3 tablespoons), Kosher Salt (Dash), Jalapeno (1), Roasted garlic (1 cup). Puree all ingredients together in food processor.
