Stuffed Pumpkins
Wild Rice Stuffed Mini Pumpkins
what we ate at our son’s 1st birthday party:
-homemade kimchi, quick pickles & kraut
-homemade butter and jam for the ployes
-a bowl of ployes (a buckwheat sort of pancake we eat in the northeast — they can be eaten sweet or savory!)
-a kale salad from our garden, dressed with lemon and oil (wonderful flavor, but also softens the kale!)
-a vat of mashed potatoes
-stuffed mushrooms
-baked apples (cored and stuffed with a butter/brown sugar mixture)
-honey glazed carrots, also from the garden
-stuffed roast pumpkins (pie pumpkins with a stuffing made from spices, broth, bread my brother made and celery from the garden!)
we feel so lucky that we were able to pull this off. we have been working for years to get to the point where we are growing much of our food, and being able to share this year has been incredible.

So I've just read a philosophical text about humanism and it turns out that we are all animals in zoos and it's totally acceptable that we want to have our stuffed pumpkins in our enclosures

The only breakfast you do to eat all fall. Stuffed with oatmeal, cinnamon, and maple syrup, these baked apples are a good-for-you start to the day.

Breakfast Oatmeal-Filled Baked Apples
Serves: 4
Ingredients
2 cups old-fashioned rolled oats 3 cups water 2 Tbsp maple syrup 1 Tbsp ground cinnamon 4 large baking apples, tops sliced and insides hollowed out 2 Tbsp dried cranberries 2 Tbsp chopped pecans
Directions
1. Preheat oven to 400°F. In a medium saucepan over medium-low heat, combine oatmeal and water and stir occasionally until creamy. Stir in maple syrup and ground cinnamon and let cool slightly.
2. Transfer apples to a glass baking dish and spoon in oatmeal. Bake until apples are soft and bubbly, about 35 minutes.
3. Top oatmeal with cranberries and pecans and serve.
I sure hope they cook the flesh scooped out of the apples in the oatmeal. There's no sense in letting that go to waste.
For that matter, one ought to be able to do the same thing with miniature pumpkins (e.g. the orange 'Jack Be Little' or the white 'Baby Boo' varieties.) which I've baked meatloaf and cheesecake in before.
