Mushroom Pilaf Stuffed Sweet Potato *Vegan* Yields 2 servings. Each serving packs only 380 calories, 8 grams of Fiber & WHOPPING amounts of Vitamins A, C & D! Prep Time: 10 minutes Cook Time: 45 minutes Ingredients: -2 Large Sweet Potatoes -1 cup of Basmati Rice -2 cups of Water -Drizzle of EVOO -1 tsp of Cumin -1 tsp of Black Pepper -1 tsp of Turmeric -1 tsp of Chili Salt -1 tsp of Paprika -1 tsp of Garlic Powder -Drizzle of Light Olive Oil -½ Red Bell Pepper Diced -½ cup of sliced Bella Mushrooms -½ Yellow Onion Diced -3 Scallions Diced - Separating whites & greens -¼ cup of So Delicious Vegan Mozz Shreds -2 tbsp of chopped Cilantro Steps: -Rinse & dry all vegetables. -In a large pot, place your 2 large sweet potatoes & cover with water. Bring this to a boil with a sprinkle of salt. Once boiling, reduce to a medium flame & cover. Cook for about 25 minutes or until soft (check with a fork). -In a saucepan, bring a drizzle of EVOO & 2 cups of water to a boil. Once boiling, stir in rice, cumin, turmeric, chili salt, paprika & garlic powder. Reduce your heat to low, cover & allow to cook for 20 minutes, stirring often. -In a large skillet with a drizzle of light olive oil, saute sliced mushrooms, diced onion, diced pepper, & sliced scallion whites over a medium-high flame. Season lightly with salt & pepper. Continue to saute for about 5-7 minutes. Preheat the oven to 400 degrees Fahrenheit. -Once sweet potatoes are cooked, drain & rinse with cold water. -Once rice is ready (20-25min.), mix it in the skillet with your veggies. -On a cookie sheet, place your sweet potatoes & slice the middle to open them up a bit. -Fill each sweet potato with your rice & veggie mix. Top with vegan mozz shreds & stick in the oven at 400 degrees Fahrenheit for about 10 minutes or until mozz appears melted. -Plate your sweet potatoes, top with cilantro & sliced scallion greens.
