Makes 1 large loaf or 2 small loaves
Egg replacer equivalent to 2 eggs (I use Ener-G egg replacement, but you can also use flax eggs)
1 cup orange juice (fresh squeezed is better, but you can also use bottled)
1/4 cup coconut oil, melted
2 tbsp vegan milk of your choice
1 cup fresh cranberries, whole or halved (depending on how much you like the tarteness)
Line a loaf pan with parchment paper, or lightly grease it
In a medium-sized mixing bowl, mix your egg replacer and set aside
In a large mixing bowl, combine all-purpose flour, baking powder, baking soda, and salt. Stir to combine
Add orange juice, brown sugar, coconut oil, applesauce, vegan milk, and vanilla extract to your egg replacer. Whisk to combine
Pour the wet ingredients into the large bowl of dry ingredients and stir until combined.
Fold in your cranberries and pour into your pan(s)
Bake for 30-45 minutes, or until a toothpick comes out clean
Remove from the oven and let cool
This is amazing served warm, but it can be kept in the fridge and served at room temperature later on as well. Enjoy :)
