These mini vegan key lime pies are a delightful twist on the classic dessert. Creamy and tangy filling made with cashews and key lime juice, nestled in a buttery almond flour crust, they are perfect for any occasion.
Ingredients: 1 cup raw cashews, soaked overnight. 1/2 cup coconut cream. 1/4 cup maple syrup. 1/4 cup key lime juice. 1 tablespoon key lime zest. 1/4 cup coconut oil, melted. 1 cup almond flour. 3 tablespoons coconut oil, melted. 2 tablespoons maple syrup. Pinch of salt. Key lime slices for garnish optional.
Instructions: Set the oven to 350F 175C and heat it up. Melt 3 tablespoons of coconut oil, add 2 tablespoons of maple syrup, and a pinch of salt. Use a food processor to blend the ingredients until they form a dough. Make sure the dough is spread out evenly along the bottom and up the sides of the mini tart pans when you press it into them. It takes 10 to 12 minutes in the oven until the crusts are lightly golden. Allow them to totally cool down. Soaked cashews, coconut cream, maple syrup, key lime juice, key lime zest, and 1/4 cup melted coconut oil should all be put into a blender. Mix until it's creamy and smooth. Put the lime filling into the tart shells that have been left to cool. Put the tarts in the fridge for at least 4 hours, or until they are set. If you want, you can add key lime slices to the top after it's set before serving.

This is probably my favorite Key Lime Pie overall, from the many I’ve made over the last couple years. It’s my most successful baked version after a couple experiments and several raw versions that I also like. This one is cashew and coconut cream based, sweetened with pure maple syrup and sits on an organic cinnamon toast crunch cereal crust that I adore.
