Made a heathy mudd-French silk pie! Adapted from a Minimalist Baker recipe, with dates, walnuts and raw cocoa, and a filling of coconut cream, unsweetened cashew yogurt, silken tofu, vanilla and melted 72% dark chocolate chips. One of my all-time favs for my homemade desserts- A Chai-spiced Apple-Walnut crisp, Oat crumble sweetened with coconut sugar and pure maple syrup, and topped w/my own vanilla-maple coco-whip. This is easily one of the best things I’ve ever made. I have NEVER made an apple dessert or crisp before. But after finding myself with a boatload of mixed organic apples (leave those skins on!) and fresh ginger root from the discount produce section, combined my mad love of walnuts, I went for this. Came out absolutely heavenly, and was compared to crack by my roommates! Not only does it taste stunning, rich and decadent, but gives you a boost, an awakened feeling, and (possibly...), a little aphrodisiac effect! I can’t wait to make another batch of this with the latest batch of apples I have! Do you love lemon and vanilla as much as I do? In my my continued quest to make the perfect lemon-vanilla buttermylk poundcake (or loaf, depending on your viewpoint and terminology..), I made this! Which overall...came out great, although the flour was a bit too hearty for this, and I made note of a few other tweaks I need to make. Another milkshake I’m proud of. This is both a go-to for healthy meal replacement and decadent richness. Raw cocoa nibs, one of the healthiest, most nutrient and antioxidant foods on the planet, allows you to control your chocolate flavor from scratch. I blend it with full fat coconut milk and cream, silken tofu, cashews, mint, Matcha, almonds, vanilla, dates, spices, avocado and a bit of pure maple syrup. Finished with my cocowhip and a few pecans. Thats a lot of very healthy, organic, filling ingredients! You could fill up so many of your vitamins, minerals, enzymes, antioxidants and micronutrients with this, while simultaneously drinking a rich, decadent milkshake! Milkshakes! One of my favorite things ever, to make and consume🤤 In this case-A CANNOLI milkshake, all vegan! I often choose a concept, then make my own vegan frozen custard or soft serve as a base, possibly my own nut mylk, get the best ingredients I can and go from there. Here, I made a cultured cannoli filling with raw cashews, hazelnuts and coconut cream, added soy yogurt, maple syrup, powdered sugar, lemon and spices. After culturing for a few days, I made a burnt coconut caramel, cannoli shell cookie crisps, and after blending up the shake, topped it with roasted pistachios, cookie crumbles and chocolate chips! One of my favorite shakes! This is probably my favorite Key Lime Pie overall, from the many I’ve made over the last couple years. It’s my most successful baked version after a couple experiments and several raw versions that I also like. This one is cashew and coconut cream based, sweetened with pure maple syrup and sits on an organic cinnamon toast crunch cereal crust that I adore. Ingredients to me are everything. I love carefully researching and selecting the perfect ones for whichever recipe I’m playing with, and experimenting with all the possibilities. When I make my fav - the Key Lime Pie, I always start with true Key Limes I pick up at the Hispanic markets, where they’re the freshest. (Eventually I’ll be growing my own Key lime trees at home..) Add that ingredients such as high quality coconut cream, raw cashews, cultured, plant based cream cheeses and sour creams, pure maple syrup (with so many variations, each one uses a different combination) and the best in aromatic spices, as examples. Most often I’m also working with organic ingredients and hand inspect everything and try all the options to make sure I get the finished product I want.
