Fresh Bell Pepper
I love eating veggies which is quite perfect because I was vegetarian for my entire life before switching to veganism a few years ago. I loved eating broccoli from a very early age but bell peppers were always on the ‘okay’ list.
Green bell peppers were always in the house because we would make bell pepper (capsicum) curry with them. I was fine with the dish but it never stood out to me like some of the other veggies. Fast forward a few years and my mother started making bell pepper curry with a mix of all the colors. It blew my mind. The different flavors of each color mixing with the spices was glorious.
It took me a few more years to start cooking on my own but once I did I knew I wanted my dishes to have pops of color in them and that was my motivational factor to utilize as many veggies in dishes as I could! That said, I will always be partial to red bell peppers. They are my weakness. I love them and add them to everything I can. Red bell pepper with Indochinese food is my favorite combo but it’s equally great on an open faced hummus sandwich.
Bell peppers are very high in vitamin C and also contain other vitamins and minerals like B6, K, A, E, folate, and potassium. They are mainly composed of water (about 92%) and the rest is carbohydrates (from the sugars), fiber, and protein. The green ones are less ripe and contain less sugar while the other colors are more ripe and contain more sugars and are more sweet.
If you don’t like bell peppers or think you don’t like them I implore you to try different colors and incorporate them into different recipes because you might be surprised at what you end up liking.
