Peanut Noodle Salad . Is there anything better than noodles? I’ll take them in any form: Italian pasta, Asian noodles, Indo-Chinese noodles, macaroni and cheese (vegan, of course), and the list goes on and on. These are all hot and wonderful but which do you choose on a blistering hot, summer day in Atlanta? None. You go with this peanut noodle salad because it’s supposed to be cold and that’s what we love. But don’t get me wrong; just because we want it cold doesn’t mean we don’t want it spicy. I’ve packed this full of flavor and spice with sriracha, red chili flakes, and black pepper. And let’s not forget the delicious medley of fresh veggies and crushed peanuts that add that perfect crunch to this dish. What about the fresh squeeze of lime? Is there anything more refreshing than some cold citrus on a hot day? So many reasons to make this meal immediately! So what are you waiting for? Go on! Go make a vegan lunch that’ll keep you coming back for more!
Breakfast: Pumpkin pie oatmeal
Lunch: Bendakaya kura (okra curry), tomato pappu (tomato dal), and brown rice
Dinner: Barnyard millet kichidi
Salad: Kale, spinach, Brussels sprouts, red cabbage, red onion, carrots, apple
It’s the new year! I know most of us are trying to eat healthier to lose weight but I implore you to not focus on weight loss only. Being healthy is more important than a number on a scale.
