Carrot Zucchini Muffins-Healthy Sweet Treat
These savory low-carb vegetable muffins are packed with nutritious ingredients and are perfect for a keto-friendly breakfast or snack.
Ingredients: 6 eggs. 1 cup almond flour. 1/4 cup grated Parmesan cheese. 1/2 cup chopped spinach. 1/2 cup diced bell peppers. 1/4 cup diced onions. 1/4 cup chopped mushrooms. 1/4 cup diced tomatoes. 1/2 tsp baking powder. 1/2 tsp garlic powder. 1/2 tsp dried oregano. Salt and pepper to taste.
Instructions: Preheat oven to 350F 175C and grease a muffin tin. In a large bowl, whisk together eggs, almond flour, Parmesan cheese, baking powder, garlic powder, oregano, salt, and pepper. Fold in chopped spinach, bell peppers, onions, mushrooms, and tomatoes until well combined. Pour the batter into the muffin tin, filling each cup about 3/4 full. Bake for 20-25 minutes, or until muffins are set and lightly golden on top. Allow the muffins to cool slightly before removing them from the tin. Serve warm or store in an airtight container in the refrigerator for up to 5 days.

🌿 Courgette, spinach and feta muffins 🌿 A little bit of Sunday baking here 😀. This is a great way to pack goodness into muffins whilst still making them yummy for your little ones (and you). Courgette, spinach and feta are a wonderful combination but you can always swap feta for another cheese if you're not a fan. These muffins are perfect for lunch, dinner or a light snack 👌🏻. ~ Ingredients: - 1 cup of grated courgette - 1 cup of chopped spinach - 1 1/4 cup of plain or wholemeal flour (I used wholemeal) - 1 1/2 tsp baking powder - 1 tsp baking soda - 1 tsp garlic powder - 2 eggs - 3 tbsp of olive oil - 1/2 cup of full fat milk - 100g feta cheese ~ Directions: 🧀 Preheat the oven to 160C and oil the muffin tin. Grate the courgette, put it into a tea towel and give it a good squeeze to remove some of the water. Finely chop the spinach. 🧀 In a large bowl, whisk together the flour, baking powder, baking soda and garlic powder. Lightly beat the eggs in a separate bowl then add them to the flour mixture together with the olive oil, feta and milk. 🧀 Cheesy vegetable muffins 🧀 If you're a fan of savoury muffins then these are perfect for you. I managed to cram 6 different vegetables into this recipe but you can always swap some for other vegetables and see how they turn out! They're a perfect little lunch time filler food, or snack for hungry babies (and parents) on the go 👌🏻✨. ~ Ingredients: - 220g self raising flour - 120g Cheddar cheese, grated - 3 tbsp olive oil - 1 egg, beaten - 200ml full fat milk - 1 small onion, finely chopped - 1 red pepper, finely chopped - 1 carrot, grated - 1 courgette, grated - 4 tbsp sweetcorn - small handful of spinach, finely chopped ~ Directions: 1. Preheat the oven to 200°/fan 180°. Grease a muffin tray - if it is not already non stick. 2. In a bowl, mix together the flour and cheese. 3. In a separate bowl, combine the oil, beaten egg and milk. 4. Add the vegetables to the bowl with the flour and cheese. Stir in the wet ingredients and mix thoroughly until well combined. 5. Divide evenly into the muffin tray. Bake for 25-30 minutes, until golden brown and fully cooked through. 6.
