APRICOT (#911, black aroma)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered boiling water; brew 2 minutes

INGREDIENTS: Black tea, mango flakes, marigold blossoms, and natural flavor

LEAF: Classic dark leaf highlighted with yellow fruit and flowers

INFUSION: Dark coppery red

AROMA: Very fruity but the tea itself really comes through

LIQUOR: Starts off sweet with a slight floral note and finishes with a hearty classic black tea note

PAIRING: Excellent iced. This tea reminds us of an old favorite, Flower of Hawaii.

COCONUT (#974, green aroma)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered water, boiled and cooled to 90°C/194°F; brew 2 minutes

INGREDIENTS: Green tea, shredded coconut, and natural flavor

LEAF: Long emerald-green slivers of tea leaves generously sprinkled with pieces of coconut

INFUSION: Cloudy light green

AROMA: Sweet coconut mixed with mellow, grassy sencha

LIQUOR: Ideal balance between the creamy coconut and grassy sencha. The flavors are sharpened when iced, making this tea particularly refreshing.

PAIRING: Perfect iced; also try infusing heavy whipping cream with this tea (a few hours to overnight) and then use the whipped cream to top a fruit salad

CREAMSICLE (#911, black aroma)

PREPARATION: 3 g (1 heaping tsp) per 8 oz filtered boiling water; brew 5–10 minutes

INGREDIENTS: Rooibos, orange peel, freeze-dried yogurt granules, and natural flavor

LEAF: Reddish-orange rooibos slivers dotted with pieces of orange peel

INFUSION: Classic rooibos brick red

AROMA: Exactly like a creamsicle

LIQUOR: Ditto!

PAIRING: Surprisingly good when hot and really amazing when iced. Infuse heavy whipping cream with this tea (a few hours to overnight) and then use the whipped cream to top just about any sweet ending!

When I began blending this tea—a tribute to a country that holds deep meaning for my family—I selected ingredients that have special significance for Ukrainians.

For the base tea, I decided on leaves that have been plucked from wild-growing tea shrubs in the country of Georgia, which also borders the Black Sea, southeast of Ukraine. This lower latitude is enough to make Georgia conducive to growing tea, whereas Ukraine’s climate is too harsh, although there is one experimental farm there. 

Sunflowers reached Ukraine in the mid-1700s, and now the country produces 19% of the world’s output (oil, fodder, fertilizer, potash, seeds, ornamental flowers). The bright yellow of the Ukraine flag represents a field of sunflowers against a vivid blue sky. 

With sunflower petals in the mix, I added blue cornflower petals to represent that blue sky. Native to Ukraine, cornflowers lend not only bright color but they also give the tea some creaminess.

As the Bread Basket of Europe, Ukraine is the third-largest buckwheat producer globally. This gluten-free pseudocereal is widely consumed in Ukraine and is part of many traditional recipes—a wedding cake traditionally is made of buckwheat provided by one family and honey from the other.

Fields of blooming white buckwheat flowers attract honeybees that produce a dark and complex honey from the nectar. Ukrainians eat a lot of honey but also export a sizable amount to the European Union and North America.

Pronounced: Slav-aaaah Oooh-cry-eee-knee

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered boiling water; brew 4–5 minutes. Please note that we recommend that you lightly shake this tea before scooping.

INGREDIENTS: Wild Caucasus Mountain black tea, sunflower petals, blue cornflower petals, buckwheat, and honey granules

LEAF: Matte black, long and wiry tea leaves sprinkled with bright yellow and blue petals

INFUSION: Yellowish copper

AROMA: Classic light black tea with a subtle hint of honey

LIQUOR: Light classic black with a subtle note of honey and creamy vegetal while the buckwheat adds a nutty note

PAIRING: Nice with lemon, or if you like a sweeter tea, add a little local honey. This tea is perfect with a slice of traditional Ukrainian honey cake, poppyseed cake, or Easter babka.

For green tea, after Camellia sinensis leaves are picked, they are processed with minimal, if any, oxidation. Chinese teas are traditionally pan fried to stop oxidation; this gives a toasty note to the tea. Japanese teas are usually steamed, giving a umami flavor. Stopping oxidation early in the process preserves the bright color and more vegetal flavor of the leaves.  

In this month’s selection, notice how each of these teas are very different from the others. Although all three are green teas, they come from three different tea-producing countries. The plants themselves—along with myriad factors including climate, weather, and production methods—determine what you taste in the cup.

GEORGIA BLACK SEA (#302, green classic; photos above) 

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered water, boiled and cooled to 80°C/176°F; brew 2–3 minutes

INGREDIENTS: Second-flush green tea cultivated close to the Black Sea, in the country of Georgia

LEAF: Beautiful dark sage-green leaves—it seems as if each leaf has been carefully processed individually

INFUSION: Like the petals of a late blooming sunflower!

AROMA: Subtle and sweet

LIQUOR: Light sweet umami of a classic Japanese tea followed by the toastiness of a classic Chinese tea

PAIRING: Pleasant accompaniment to any food—any time of day!

NEPAL HIMALAYA VIEW (#310, green classic; photos above)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered water, boiled and cooled to 90°C/194°F; brew 1.5 minutes

INGREDIENTS: Green tea from high-cultivation areas of eastern Nepal

LEAF: Similar to its Himalayan neighbor; the mix of green, brown, and white leaves has an appearance that’s almost a first-flush Darjeeling

INFUSION: Khaki

AROMA: Not as vegetal as its green counterparts; it’s slightly more earthy than expected from a green tea

LIQUOR: Reminiscent of a light, very early picked Darjeeling but with a slightly more vegetal note

PAIRING: Lunch

CHINA PALACE NEEDLE (#512, green classic; photos above)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered water, boiled and cooled to 80°C/176°F; brew 2 minutes

INGREDIENTS: Green tea from Hubei Province, China

LEAF: Beautiful verdant, lustrous spears, in dark emeralds

INFUSION: Lighter yellowish-orange

AROMA: Slightly sweet with a vegetal edgea

LIQUOR: Very vegetal, somewhat like swiss chard, leaving a bit of a bite that lingers

PAIRING: Unlike most green teas, I would serve this with a more substantial, hardy meal

INFUSION: Dark yellowish brown

AROMA: Nutty chocolate

LIQUOR: More subtle than the aroma, but the nutty chocolate flavor makes this a sweet dessert tea

DARK CHOCOLATE (#1375, rooibos aroma, caffeine free) (photos below)

This November, we're trying really hard to make the best of a world that continues to be upended. The Darjeeling Poobong and Nilgari Frost were picked, tested on-site for purity and quality, and then air-freighted to us, ensuring maximum freshness. In fact, the time from picking to cup is only a few months! Because these teas were produced in small batches (less than 100 kilos), and come from small tea gardens, you're in for a rare treat!

Our houjicha comes from Taka, whom you may have met at TeaHaus! We partner with him for tea—such as this ultra-premium houjicha—and for special events such as the tea-roasting workshop that took place right before the pandemic closed things down. Taka is the 7th-generation head of Katagi Koukaen tea garden in Asamiya, Shiga Prefecture, Michigan's sister state.

Lively blend of sencha green tea & spices, a fresh take!

Perfect for fish! Rub fish with Surf’s Up Sencha Spice Blend and add a pad or two of butter (or olive oil) and a couple lemon slices. Broil or grill until done. Salt to taste.

Great base for rice, noodles, or broth.

Dip for chips/veggies:

8 oz sour cream

1 Tbsp mayonnaise

1 tsp sugar

1 Tbsp Surf's Up Sencha Spice Blend

Stir together and chill.

Fish Tacos:

1 lb tilapia

Citrus is native to the foothills of the Himalayan mountains, in an area that comprises India’s eastern Assam region, China’s western Yunnan Province, and northern Myanmar. 

The plants and flowers were originally prized for their fragrance, but through evolution as well as both natural and artificial selection, their fruit eventually became a food source. The sweet orange was developed by the late 1400s—forever changing the importance of citrus in our lives!

We begin with a classic black tea, this one from Vietnam, a country that sometimes struggles with quality and purity—but when they get it right, the results are superb! Ban Lien Red comes from the northern part of the country, Lao Cai province, a mountainous region that borders the southern edge of China's Yunnan Province, another tea-producing area. Agriculture is the base of Vietnam's economy, and around 80% of the tea that it produces is exported. High-value tea, then, is one of the keys to alleviating poverty for those in rural regions, and the premium Ban Lien Red beautifully demonstrates what Lao Cai is capable of! 

#872 VIETNAM BAN LIEN RED (premium black classic)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered water, boiled & cooled to 95°C/203°F; brew 2–3 minutes

INGREDIENTS: From northern Vietnam’s Lao Cai province

LEAF: Sienna to dark brownish-black long wiry leaves

INFUSION: Beautiful coppery red

AROMA: Classic black tea smell with an ever-so-slight floral fruity note

LIQUOR: Smooth, rich (but not malty), with a slight floral note

Having new teas on our tea wall sometimes means that other teas are no longer available, as happened with one of our favorites, the hazelnut oolong Bossa Nova. Nothing will exactly replace it, but we think you'll enjoy Hazelnut Chocolate, a more chocolatey version. This tea combines oolong with black tea and even roasted twigs, and then adds cocoa, hazelnut brittle, and a touch of cinnamon to make this a lovely dessert tea.

#1638 HAZELNUT CHOCOLATE (oolong aroma)

PREPARATION: 3 g tea (1 heaping tsp) per 8 oz filtered, boiling water; brew 2 minutes

INGREDIENTS: Roasted green tea, black tea, oolong tea, cocoa bits, hazelnut brittle (sugar, hazelnuts), cinnamon, and natural flavor

LEAF: Dark leaves with a sprinkling of roasted twigs and pieces of cocoa nibs

INFUSION: Dark yellowish brown

AROMA: Nutty chocolate

LIQUOR: More subtle than the aroma, but still enough flavor to remind you of dessert!
