❤ Tandoori Biryani ❤ Growing up in a big Indian family, every function from birthday to wedding were always celebrated together. ”Kyuki asli majja toh sabke sath aata hai” 😜. A huge gathering with we cousins jumping around, parents engaged in mystic convos and grandparents reminiscing their old days. All these happy moments were celebrated by making of my grandpa’s patent dish – Biryani. I to date remember the aroma of basmati rice soaked in chicken gravy served with raita. This tandoori chicken biryani in frame is a heartfelt tribute to those happy & carefree days. Tandoori has always been a difficult flavor to achieve at home, due to lack of charcoal tandoor. What I do to nail the flavor is smoke the marinated chicken using small piece of hot charcoal and drop a spoon of ghee over it. Immediately covering it with a lid, traps the smoke in the vessel and helps chicken absorb the flavor.
