Long story short, our genes do impact our basic preferences when it comes to taste, but those preferences can altered through conditioning. I remember hearing something similar about spiciness tolerance in food. Even people born in cultures whose cuisines emphasize spicy foods aren’t born with a tolerance for that heat. It has to be conditioned over time.

So don’t give up after that first sip of that triple dry-hopped IPA! You might actually grow to enjoy it after going back a few times. All because Science!
