NYC is so magical during Christmas. It is just a different spectacular type of energy in the city. The store windows, holiday markets, Christmas tree shops on the sidewalks, and all the lights, music and spectacular trees. No turkey here. This is a Casserole - Indian Style. Layer 1: Potato Eggplant Shaak Layer 2: Leftover Roti that's been stir fried with salt, turmeric and chilli powder Garnish: Red onions with lime juice salt and crushed cumin. Here it is! Finally! My redo of my dress from the 90s - from my high school days so long long ago 😱. Generally, my mummy does a purge donates all my old Indian clothes that I don't wear - I've managed to keep this one because I just loved the dupatta. The pants on this outfit were absolutely horrendous - flare legged with slits 😳. So since Sharara style cholis and pants are really in trend right now, I replaced the pants with these wide leg trousers I found @forever21. Worked beautifully. Craving these His & Her open-faced egg sandwiches using leftovers. His: Ezekiel toast with power greens, tomatoes, onion, leftover baba ghanoush, perfect hard-boiled eggs, sprinkled with salt, black pepper and red chili powder - inspired by Bites Middle Eastern Sabih Sandwich. Hers: Ezekiel toast, power greens, tomatoes, onions, hard-boiled eggs, and leftover homemade mint cilantro chutney. Tip: Experiment with leftovers - they just don't have to be reheated and eaten in same form. I've made pizza casseroles with leftover pizza, Mediterranean pitadallas with leftover hummus or baba ghanoush (check earlier posts for all ingredients on this), and a twist on nachos using leftover Indian style scrambled eggs (egg Bhurji) - just example of few concoctions! Tip 2: For perfect hard boiled eggs every time, try this: Cover eggs in enough cold water in a pot and bring it to a rolling boil. As soon as it starts to boil, turn off the stove and cover the pot. I leave mine covered for 10-12 minutes to get them fully cooked (leave for lesser amount of time if you want your yolk runny). Uncover and place eggs in ice water to stop cooking process. Peel and enjoy. Tip 3: Must try Ezekiel bread. Made with organic sprouted grains - it's more filling and more fiber packed than regular multi-grain bread. From Friday night's dinner party with friends ❤️ Idli 1: Whole Green Moong Dal and Urad Dal (1:1 ratio) idli. Wash and soak dal separately over night. Grind in the morning. Ferment 6-8 hours, add salt, power greens, ginger & green chili paste and steam cook =) Idli 2: Regular idli. This time tried to make using Idli Poddi flour. Just add water and ferment for 12 hours. (Mine did not ferment as well this time 😔). Add salt and steam cook. Not pictured: Aloo Gobi crust pizza with Mozzarella and Monterey Jack cheese, onions, tomatoes and mint cilantro chutney - 😋 must make again!
