Homemade Re-Fried Beans
So I decided to try and make re fried beans. You know because I am trying to eat less meat, and beans are a great source of protein. I LOVE re frieds, but hate all the hidden ingredients and preservatives that the canned store ones contain. So I challenged myself to invent my own. I read a whack of different pins, blogs, and cook books and came up with this...
Take 1lb dried pinto beans and put them in a slow cooker with 6 cups of water. 1 finely diced jalapeno and 2 small onions 1 ish tbsp on chili power about the same of cumin powder. Really anything you like with beans Cook on high 5 hours on high. Remove the extra liquid and then use those fun handy immersion mixer things. Add any liquid back if you think you need to, and then salt to taste.
Then get fancy and make some different meals from it.

Second week back onto blogging and I forget everything!!! Well let’s start the third week out a little better!
This week my new recipe that we tried was this delicious crock pot balsamic chicken. Usually I change things up to make the ingredients super healthy and low in points, but this blogger did it all for me! Here is a link to her page.

As for my weekly goals...
I said I was going to take a new before picture. I say new because I had lost 50lbs! I found it really hard to enjoy beer and keep my weight down that low, so I gained about 5lbs back and was really happy. I was able to maintain a healthy weight, look fabulous, feel great in everything, and most importantly drink beer. I have started spinning, which is ammmmmmmmmazing. I have changed my legs and lower half of my body so much. However my stomach not so much. Christmas was very very fun, but I managed to gain 5 more lbs that don’t seam to want to leave. So that is why I am starting fresh. My new start weight is 150 and I would like to feel tighter then I am now. I don’t really care what the number on the scale says, but would like to feel the way I did at 145 and get my 4 pack back, and still drink a 6 pack. Cheers to a new journey! I have taken the picture, however not sure how comfortable I am to post it. I have known other bloggers that had their pictures stolen from here from drug companies and that scares me!
But I have them as my desktop and will start working on some change!!!!
Yup. Lets do this 2017.

New week new things to try.
Lately I am having so many thoughts about sustainable eating. Really I want to buy a piece of land and have a whack of happy little chickens, and a whole field of basil plants. However being that I have not quite won the lottery yet, I am here trying to do my part on eating sustainable. I have become a flexitarian. I eat meat, yes. Not everyday. With that being said today we had sloppy lentils.
Also turns out I should follow some photography blogs on here. *Note to self take photos that are not blurry*
Here my version of the meatless dish
Sloppy Lentils:
1 cup uncooked lentils
1.5 cup chopped onion
15 oz can diced tomatoes
1/2-1 (6 ounce) can tomato paste
2 cloves garlic, minced
1/2 cup ketchup
1 teaspoon mustard powder
1 tablespoon chili powder
3 tablespoons molasses
1 Tbsp white vinegar
salt and ground black pepper to taste
Cook onions in a large skillet over medium heat until the onions have softened about 4 minutes. (Most people fry in oil, however I use water. Less points!)
Add tomatoes, garlic, tomato paste, ketchup, mustard powder, chili powder, molasses, vinegar, salt and pepper; simmer 5 to 10 minutes until thickened.
You then cook the lentils separately.
And them all together and serve and enjoy.
Well lets make some goals...
I love goal setting. I do it constantly throughout the year. I have this underlying fear that when I stop setting goals I will stop living. Like literally. So I goal set. And hey its January... let’s do that thing that people do and set some intentions for 2017. Also its kind of my first official post in a very long time. So kind of a big deal.
1. Get back to where I felt the best. That really isn’t a number. But slowly over the last few years more and more unhealthy choices are being added into my life. I want to get back to where I crave an apple instead of chocolate.
2. Do some sort of yoga thing. Like big and bad ass. Suggestions??? I do yoga in a hot room 4 days a week and at home in my house almost daily. I am trying to yoga my way out of knee surgery!
3. Travel... always. This year I think Iceland. But really the list is endless.
4. Run the Calgary Marathon 10k. Slowly you will learn my story and how I popped my knee caps off and can barely make it threw 2.5k without pain.
5. Cook something new every week. Yup that means at least 52 new things.
6. Resurrect my #projectpositive
7. Lastly live by my mantra
Wake up. Kick Ass. Be Kind. Repeat
I’m BACK!
I missed tumblr so much. So be prepared for more life posting.
My journey began and I lost 50lbs... after this christmas some of that has snuck back on me. It was all delicious chocolate, eggnog, and pavlova! But in order to get back on track I am going to be blogging away. Follow me if you want some fun advice and humor.

Stuffed Sweet Potato
My boss had this for lunch the other day and it smelled so yummy that I decided to try and re-create it.
Take a sweet potato and microwave it for 2 minutes until it is soft. Shell it.
Mix raw chicken breast chunks, inside of the potato, shredded low fat cheese chopped broccoli, chopped onion, chopped peppers, and basically any other veg. Oh and garlic... can never forget garlic. Stuff it all back into potato shell.
Wrap the entire thing in tinfoil and bake at 350 for 45 minutes. We had it with a salad. SO YUMMY!

I don't drink pop, only iced tea, lemonaid, and juice.
I don't want to drink that much water, it will make me look bloated.

Jacket Potato
I forget what we call a baked potato with all the fixings here is Canada. In England they say jacket potato. Mainly because when you cook them you wrap them in a tinfoil jacket. Here was the one I made.
Look at it and all its yummy-ness. I actually created this from left over things in my fridge. I had made crock pot chicken the night before and this was from the left over sauce. See the crock-pot chicken recipe here..... I then through it on a left over baked plane potato and then put light cheese over top. The whole thing with a side of broccoli was so filling and 8 points. I am going to have a jacket potato revolution in my life... it was that good.
Food that sounds healthy but isn't
Vitamin Water.
I got into an arguement with someone about vending machines in schools, and how they have replaced pop with 'vitamin water.' I think I snorted water through my nose when they said they were so happy seeing schools change for the better.
Let me share some facts....
1. One of the main ingredients is still water. 2. Most the 'vitamins' are artificially made in factories, and are the vitamins that most of us get tons of already. 3. They are secretly owned by coke. Which I give HUGE props to the marketing team behind this one. 4. I personally love the packaging and all the colours. FACT
