Sesame Slaw
Dump 3 1/2 cups prepared coleslaw mix into a bowl. In smaller bowl whisk together 1 Tbs. canola oil, 1 Tbs. sesame oil, 1 1/2 Tbs. apple cider vinegar, and, if you like, 1/8 tsp. soy sauce. Add salt and pepper to taste. Toss with coleslaw mix. Sprinkle with 2 tsps. sesame seeds. Serves 4.
Asparagus with Tangerines
Trim 1 lb. of asparagus. Section a tangerine. Heat 1 inch of salted water in a sauce pan until boiling. Lay the asparagus in a single layer and cover the pan. Steam for 3-6 minutes, until crisp tender. Place on a serving dish and scatter tangerine sections on top. Season with course salt and pepper. Serves 4.
Chickpea Salad
This makes a great sandwich filling.
Drain and rinse a 15 oz. can of chickpeas. Cut 1 1/2 stalks celery into pieces.
In a bowl, mash chickpeas with a potato masher or fork. This doesn't have to be completely smooth, think tuna salad in texture.
Stir in celery, 1/3-1/2 cup tofu mayonnaise, 1/2 tsp. onion powder, 1/2 tsp. garlic powder and salt and pepper to taste until well combined. Makes enough for four sandwiches.
Vegan Pancakes
Combine 1/2 cup whole wheat flour, 1/2 cup unbleached white flour, 1 Tbs. baking powder, and 1/3 tsp. salt in a bowl. Combine 1 cup soymilk or rice milk with 2 Tbs. canola oil and 2 Tbs. liquid sweetener, such as maple syrup, apple juice concentrate, barley malt, or rice syrup (I like maple syrup the best) in a separate bowl. Add milk mixture to flour mixture. If you like you can also add an extra right now, like, blueberries, chopped peaches or apples, rasins, walnuts, pecans, or vegan chocolate chips. You can also add some cinnamon of you like. Now stir the mixture until it is just combined. It will probably still be a little lumpy. Heat a nonstick griddle or frying pan over medium high heat. Drizzle a few drops of water on it every few minutes. When the water forms beads and bounces around, the griddle is hot enough. Pour 1/2 Tbs. canola oil onto the griddle and heat until it starts to sizzle. Pour batter onto the griddle to form circle about 4 inches in diameter. Cook the pancakes for 2 minutes on one side. When bubbles appear on the surface, flip with a spatula. Cook on the other side for a minute or two. Makes about 8 pancakes.
Banana Crunch
Fill a bowl or baggie with cereal. Peel a banana and dip it in the cereal as you eat for an on the go breakfast.
Peanut Crispy Bars
Grease a 9" x 13" pan. Pour 6 cups of brown crispy rice cereal into a big bowl. In small sauce pan over medium heat warm up 1 cup creamy peanut butter and 1 cup maple syrup stirring continuously. Once the peanut butter becomes becomes soft enough that it mixes with the syrup, stir in 2 tsp. vanilla and, if you like 1 tsp. cinnamon. Pour onto the crispy rice and stir it up. At this time you can also add chocolate chips. 2/3 cup should be enough. Pour the mixture into the pan and smooth with a spoon. Refrigerate for an hour before cutting in to bars.
Cranberry Turnovers
This is a good breakfast to make with leftover cranberry sauce, I actually intended to post this around Thanksgiving, but life got in the way....
First take a 17.3 package of frozen puff pastry out of the freezer to thaw. Also take 8 oz. cream cheese out of your refrigerator to soften. Wait 40 minutes.
Preheat the oven to 400. Put the softened cream cheese, 2 egg yolks, and 1 cup confectioner's sugar in a medium bowl. Mix at low speed until smooth. It shouldn't take more than three minutes.
Roll out the first sheet of pastry until it's 10" x 10" square. Cut it into quarters. In the center of each small square place 2 Tbs. of the cream cheese mixture and 1 1/2 Tbsp. cranberry sauce. Wet the edges and fold in to triangles, then crimp the edges with a fork. Place on a parchment lined baking sheet, and repeat with the second puff pastry sheet.
Bake for 20 minutes. The pastries should be golden brown. Cool on a wire rack for 10 minutes.
In a small bowl slowly mix 1 cup confectioner's sugar with water, a Tablespoon at a time until it turns into slightly runny (but not completely liquid) icing. Scoop into a plastic storage bag and cut a tiny piece off the corner. Ice the pastries in a zigzag motion. Remember the pastries are already sweet, so this is mostly decorative, you don't want to glomp it on.
Makes 8 pastries.
Dairy-Free French Toast
In a bowl, mix together 1/2 cup fortified soymilk, 1/2 cup applesauce, and 1 Tbs. Canola oil. Then add 1 Tbs. flour, a pinch of salt, and a dash of cinnamon.
Heat a nonstick griddle or frying pan over medium high flame. You will know its hot enough when you flick water onto it and the water forms beads and bounces around. Pour 1 Tbs. Canola oil onto the griddle and heat until hot.
Quickly dip 2 slices dairy-free whole wheat bread into batter, lightly coating both sides. Cook on hot griddle for 1 or 2 minutes on one side, flip, and cook on opposite side for another 1 to 2 minutes. Continue flipping and cooking until both sides are browned. This should only take 5-6 minutes altogether.
If the griddle is dry add more oil. Repeat with remaining bread. You should have enough batter for at least 2 more slices. This is good served with maple syrup or sprinkled with powdered sugar.
If you don't like applesauce or can't eat apples you can substitute a mashed banana. Also, if you would like to add vanilla flavor, you can use vanilla soymilk.
Orange Wake-Up Smoothie
Crush 5 ice cubes in a blender. Add 3 Tbs. frozen orange juice concentrate, 1 banana, 1/2 cup soymilk, 1/4 cup pineapple juice, and 2 Tbs. silken tofu. Blend until creamy. Makes 1 big serving.
If you don't want or can't find pineapple juice, you can just use more soymilk. You also don't have to add tofu, but I think it improves the texture.
Berry Breakfast Shake
Crush 5 ice cubes in a blender. Add 1 cup fresh or frozen mixed berries and pulse until pureed. Add 1 ripe banana, 1/2 cup silken tofu and 3/4 cup orange juice. Blend until smooth. Serves one.
If you like, you can replace the orange juice with soymilk, or try a different juice like pineapple or apple. You can also switch out the berries for different fruits, like mangoes or peaches.
Instant Banana Breakfast Sauce
In a blender combine 1 banana, 1 Tbsp. raspberry or strawberry preserves, and 1/3 cup drained silken tofu. Blend until smooth. Use as a topping for cereal, toast, yogurt, pancakes.....
Italian Basil Bagel
Spread a toasted bagel with real or vegan mayonnaise, top with tomato slices and fresh basil.
Nutty Banana Spice Bagel
Combine 1 Tbs. peanut butter with 1/2 mashed banana. Spread on a bagel and season with cinnamon.
Easy Homemade Granola
Mix 1/2 cup brown sugar with 1/2 cup water. If you prefer, you can replace the brown sugar with 1/2 cup apple juice concentrate. Preheat oven to 350. In a dry skillet combine 1 cup sunflower seeds, 1/2 cup sesame seeds, and 1/4 cup almonds (either slivered or chopped). Heat over low, stirring frequently, until they start to smell toasty. Combine in a large bowl with 3 cups rolled oats, 1/4 cup flour, the brown sugar mixture, 5 Tbs. vegetable oil, 1/2 tsp. salt, 1 Tbs. vanilla, 3-4 Tbs. maple syrup, and 1 tsp. cinnamon. Spread the mixture on to two cookie sheets. Bake for 10 minutes, flip with a wooden spoon or spatula, and bake another 10. Cool in pans. Once it is cool break it up and mix with 1/2 cup dried fruit (many people like raisins, but I prefer apricots, cherries, or cranberries). Make about 6 cups. This recipe is very customize-able. In addition to trying different fruits, you can also use different nuts, and flavor it with some orange or maple extract.
