If you consider Padman as ground breaking then what will you consider people who are celebrating Mensuration Days of mother earth from generations. When everywhere else Period is a taboo, in Odisha it is a festival. Raja, the festival of Mother Earth's mensuration. For three days Women are celebrated. Varieties of food, swings plus the extra pampering. Hopefully everyone accepts this as part of life instead of thinking it as taboo. One of the food unique to Raja festival is Poda Pitha. A equal mix of Udad Dal & Rice, soaked and grind it to a smooth paste. Sugar, Dry Fruits, Coconut and 2tbsp of clarified butter is added to the paste. Then traditionally baked in a Earthen Hearth/Fire Place(ଚୁଲି). Mutton has always been a part of Sunday Lunch, isn't it? Atleast for us it always has been. There are so many varieties of Mutton preparation, starting from Kashmiri Rogan Josh to Manglorean Mutton Ghee Roast. But I will bet none of the cuisine can match the deliciousness of Mutton Gravy with Bengali & Odia style Mutton Gravy/Curry. Both are almost similar but have their own distinct flavor. Let's go with Odia Mutton Curry. In this dish, less spices are used so that it doesn't overpower the taste of mutton. But that doesn't mean it isn't spicy. Oh God!! Definitely you will get all the flavors of indian spices😁. Slow cooked mutton, without pressure cooker typically in a kadhai or Mud Pot & with variety of spices gives it a distinct flavor. The slow cooking ensures the mutton pieces absorbs most of the flavors from the gravy. And those potatoes, those succulent potatoes in the gravy along with the pieces of mutton fat just makes the dish perfect. How can someone say no to a plate of hot Odia Mutton Curry?? Some name it as Pan Cake, for some it's Dosa/ Dosai. Pan cake out if wheat, Dosa made out of Rice Flour. Now Chakuli is unique. Chakuli Pitha (ଚକୁଳି ପିଠା) is an Oriya flat,rice-based pan cake traditionally made in the state of Orissa. It is prepared using rice flour (ଅରୁଆ ଚାଉଳ), black gram (ବିରି ଡାଲି), refined edible oil though most favorable will be ghee or mustard oil, and salt. It traces its origin during early 4th century BC when Buddha had tasted the Chakra apoopa from two merchants coming from Kalinga Kingdom (Odisha) to Magadha. You know we are ancient 🤭 Now every dish goes through evolution. Sometimes the new ingredients gets added or a small change in procedure or be it an additional side dish. Now Chakuli with Mutton Lazeez that's my rendition. Mutton Lazeez. Literally translates to delicious mutton, it is a dish of melt in mouth mutton cooked in mild spices, mixed in yoghurt and cream.
