This hearty and tasty cowboy soup is easy to make in the Instant Pot and is great for busy days or cozy nights.
Ingredients: 1 lb ground beef. 1 onion, diced. 3 cloves garlic, minced. 2 carrots, sliced. 2 celery stalks, sliced. 1 can 14.5 oz diced tomatoes. 1 can 15 oz kidney beans, drained and rinsed. 1 can 15 oz black beans, drained and rinsed. 1 can 15 oz corn, drained. 4 cups beef broth. 1 tsp chili powder. 1 tsp cumin. 1/2 tsp paprika. Salt and pepper to taste.
Instructions: Fry the ground beef with the onion and garlic in a pan until it's fully cooked. Put the slow cooker on high and add the cooked beef mixture. Put kidney beans, black beans, corn, beef broth, chili powder, cumin, paprika, salt, and pepper in the slow cooker. Also add diced tomatoes. Make sure to stir everything together well. Put the lid on and cook on low for 6 to 8 hours or high for 3 to 4 hours, until the vegetables are soft. Top it off with your favorite things, like sour cream, cilantro, or shredded cheese, while it's still hot.
