Guacamole
I love guacamole. There, I said it. I am a guacamoleholic. Since the fateful day a mere 3 years ago when I tried avocados for the first time, I have been in love with the flavour and texture of the green godliness.
Making guacamole is incredibly simple, and in my experience it's always way better than the kind you buy in the supermarket. There's a sort of formula to it – you want the avocado, the flavour enhancers, and the acid.
A simple, uncomplicated guacamole can contain only four or five ingredients.
For mine I like to include -
2 Organic Avocados
2 Cloves Garlic
Juice of ½ lime or lemon.
Pinch of salt
Grind of pepper
And here's how you do it!
In a pestle and mortar, grind up your peeled garlic cloves with your salt and pepper. The salt will help break down the garlic, and help to spread out the seasoning through your guacamole! At this point add your lemon or lime juice, and re-grind. This will spread out the garlic flavour a bit and 'cook' it so you don't have such a harsh raw garlic taste.
Add your ripe avocado flesh, and mix together with your pestle until smooth. It doesn't have to be perfectly smooth, it all depends on your preferences! Sometimes it's nice to have a bit of texture in there.

As you can see, it's probably the most simple recipe possible. I always have mine with toast, or something crunchy, just for contrast!
This time I had it with toasted toasted Granary Sour dough from Marie (our fantastic bread baker!), and some sauteed bacon, chard, spinach and mushrooms. Doesn't get much more tasty than that!
