Oven Broiled Goodness
I just LOVE oven broiled sandwiches. They are amazing any time of the year for a delicious and hearty lunch.
For this sandwich I toasted pane bread, and layered on BBQ chicken and pepper jack cheese. I cracked some pepper on top of the sandwich and threw it under the broiler for a few minutes - until the cheese was bubbling and slightly browning. I removed the sandwich from the oven and topped with freshly sliced avocado. Mmm mmm now I want one!

Home Made Pizza
My boyfriend works long hard hours and is always ordering pizza to work because he can hold it in one hand while he eats and doesn't need to stop what he is doing... so I decided that I would make him pizza because its healthier and cheaper.
You can obviously add or subtract anything you want from that I did. :)
Trader Joe's has amazing pre-made pizza dough, it comes in a few different variations. I like the herb one.
Pizza dough
Marinara sauce
Cheese
BBQ chicken
Onion
Zucchini
Bell pepper
Follow instructions on pizza dough package, and eat!!!

Lemon cake with vanilla buttercream!
Snickerdoodles!
I think this is the best Snickerdoodle recipe I have ever tried! Also, its SO easy. I like mine bite sized because then they are cuter, they bake more evenly and they aren't as guilty to eat :)
Ingredients:
-1 3/4 C. Sugar (divided)
-1 C. margarine or butter, softened
-2 eggs
-2 3/4-3 1/4 C. flour
-2 tsp. cream of tartar
-1 tsp. baking soda
-1/4 tsp salt
-4 tsp. cinnamon
Directions:
Preheat your oven to 350 degrees
1. In a large bowl, cream together 1 1/2 cups sugar, butter/margarine, and eggs.
2. In another bowl, sift together flour, cream of tartar, baking soda, and salt.
3. Slowly combine wet and dry. Place in fridge for 20 minutes
4. In a small bowl mix together 1/4 cup sugar and cinnamon. Set aside
5. Roll heaping teaspoon size balls of dough in your hands, and then in the cinnamon sugar. Bake for 8-12 minutes - you can tell they are done when they are firm to the touch.

Easy Oven Roasted Dinner!
I love this dish because it's easy, delicious and pretty healthy. What is great about this dish is that you can do it with virtually any vegetable that you have laying around the house and make just enough for yourself, or you can do a huge dish of it when you have company! I'll write the recipe with what I used here. Remember, there are no exact measurements, its all about what you want and how much!
Here is what I did!
Ingredients:
-1 Bell pepper, 1 inch squares
-1 Zucchini, half inch pieces
-1 Onion, 1 inch squares
-1 Corn on the cob
-1 1/2 cup asparagus, 1 inch pieces
-1 cup green beans, 1 inch pieces
-1 1/2 cup cauliflower, 1 inch pieces
-3 large carrots, peeled, 1/2 inch pieces
-2 cups sweet potatoes, peeled, 1/2 inch pieces
-2 cups red potatoes, peeled, 1/2 inch pieces
-Olive oil
-salt, pepper, and any other herbs you like (garlic salt, italian seasoning, red pepper flakes...)
Directions:
1. Preheat oven to 425
2. Combine all chopped ingredients in a large bowl.
3. Drizzle a few tablespoons of olive oil over bowl, and toss. Make sure it all gets covered, add more oil if needed.
4. Add salt, pepper, and herbs to taste
5. Spread out over oven pan (9x13 cake dish, or something similar)
6. Place pan in oven for 30-40 minutes. Stir once. Test to see if food is ready by the red potatoes - stick a fork in a thick one, if you fork goes through with no resistance, than you dinner is ready!
Remember, you can easily alter this recipe for any taste or company size! :) It also goes well with just about any meat.

M&M Cookie Dough (x)
This bothers me. it looks delicious, don't get me wrong... but your'e not supposed to use an electric blender to mix in ingredients like chocolate chips and M&Ms... it breaks them. You're supposed to incorporate them by hand with a spatula. Pretty picture but its really annoying.
