An easy but tasty vegetarian curry.
This is a good recipe for when you need some time to relax or do other things while you’re cooking, and uses minimal dishes. Recipe is optimized for 3-4 meals, which reheat well so you have leftovers for other low-energy days.
Ingredients: 3-4 chicken breast or thighs (boneless and skinless recommended, but not required), 2 cups rice (not minute rice!), 1 tin cream of chicken or cream of mushroom soup, 2 ¼ cups chicken boullion, seasoning salt.
Spread rice in the bottom of a casserole dish or other coverable, deep, oven-safe dish. Place the chicken in a single layer on top. Mix the boullion, soup, and seasoning salt seperately and pour over the chicken and rice. Cover and cook at 350 for 60 minutes, stirring at the 40 minute mark.

Vegetarian Baked Ziti with Chorizo Spiced Chickpeas
3-4 Spoon Stroganoff
This one takes a few more spoons to make, but it generally can feed a person for a couple of days on leftovers, and it reheats well, so it’s a good thing to make in advance if you know you’ll have a couple of hard days ahead!
You’ll need:
1 lb ground meat (I use ground turkey or beef, but vegetarian fake meat would work too!)
2 cans condensed cream of mushroom soup
1 bag of egg noodles
whatever spices you like
1. Brown your meat in a skillet.
2. In a bowl, dump out your soup cans and add about a half can of water. Stir it up good and spice it however you like (I do garlic and Worcestershire sauce and pepper).Â
3. Add the soup to the skillet and mix it. Heat it until the soup gets hot and stir it lots to make sure to get the meat juice into the soup.
4. Cook the bag of egg noodles. Drain them and then put them in a mixing bowl (I usually use the one I mixed the soup in!).
5. Pour the contents of the skillet over the noodles and mix.
6. Enjoy!
