Catechism of the Catholic church, which is what the church believes. There are simpler versions out there though, and I started with those because it was just so much information all at once 🥲 The Baltimore Catechism is a commonly used one
So much great stuff on Ascension Press, my fav is Fr Mike Schmitz's Bible in a Year podcast which I listen to on Spotify 🎧
A Catholic study Bibles, I personally just have this one but there are so many great ones out there. They help tie together sacred scripture and church doctrine. And Catholic bibles contain the 7 deuterocanonical books that protestant bibles (like the very popular KJV) omit from the Old Testament.
Catholic Answers has some pretty good stuff, especially about some of the more complex subjects in the church
Institute of Catholic Culture also has interesting things to read through, my favorite is the Sunday Gospel Reflections
And then recently @g0thiepi3 recently shared free courses from Christendom College (a small Catholic university) which have some really interesting topics
There are so many amazing books out there. That could definitely be its own extremely lengthy post. But my very favorite when I was first reading books about Catholicism was A Map of Life by Frank Sheed. It is so approachable, and helpful, and got me into reading other Catholic books, and now I'm such a nerd 🥲🤓🥲 (He also has Theology for Beginners which is great too.)
But definitely your very best resource is a local priest who can get to know you, understand your spiritual needs, and answer questions with the authority of God's Church behind them 💕💒
