Jamaican Jerk Chicken
INGREDIENTS:
1lb chicken breast
1 jalapeno pepper, diced & seeded
3 tbsp. water
2 tbsp. lime juice
2 tbsp. lemon juice
4 cloves garlic
2 tsp low sodium chicken broth powder or 2 bouillon cubes
1/2 tsp ground cumin
1/4 tsp dried thyme
METHOD: Mix all ingredients together, except chicken. Add chicken and let marinade in refrigerator about 4 hours or overnight.
Its easy to put all chicken in a ziplock bag.
Cook on grill or bbq until chicken is cooked through.
