I think I just made the Mac Daddy of all salsa recipes! #love #mexican #food! -6 vine tomatoes (red and orange mix), seeded and diced (approximately 2 cups) -2 small mangos, medium dice (approximately 1 cup) -2 avocados, medium diced (approx. 2 cups) -1/2 red onion, diced (approx. 1/2 cup) -1 cup black beans -1/4 cup minced cilantro -1 clove garlic, minced -1/2 jalepeno, minced (approx 2 TBsp - use less if you don't like kick) -1 Tbsp olive oil -1 1/2 limes, juiced (approx 1/4 cup + 1 Tbsp) 1-2 tsp sea salt to taste *optional sprinkle of cumin and paprika if desired... ;) Toss avocado in the lime juice and combine all! Yum. Creates a big batch! Yields approx 6 cups. #blackbean #mango #avocado #tomato #fresh #salsa #delicious #plantbased #vegan
