Chili Lime Noodles
What you need:
1 package of rice noodles
1 Green Pepper, thinly sliced in long strips
4 Celery Stalks, thinly sliced in long strips.
1/2 Yellow Onion, sliced thinly
1/4 Cup of Fresh Chives chopped
3 Medium Cloves of Garlic, minced
3 Carrots Peeled in thin strips
2 Tsp of Curry Powder
2 Tsp of Chili Powder
*Spice amounts can vary to more or less depending on personal taste.
2 Tsp of Extra Virgin Olive Oil
Juice of 1/2-3/4 of a Lime
Lime wedges for garnish
What to do:
Follow instuctions on package for making rice noodles. Cooking instructions and times may vary,
In a large frying pan or wok heat olive oil on medium heat add in garlic and onion and sauté until soft, stiring occasionally careful not to let garlic brown,
Add in pepper, celery, carrots, chives, curry and chili powder.
Mix well. Add in a 1-2 Tablespoons of warm water and lime juice. Cover, reduce heat, stir occassionally. Cook for apporximately 4-5 minutes, vegetables when done should be slightly crunchy.
When rice noodles have finished cooking, drain and add noodles into the pan with vegetables and mix well. Let sit in the pan for 1-2 minutes allowing noodles to soak up flavors.
Serve warm and garnish with lime wedges and chives.

What you need:
Your ingredient amounts will vary based upon how much you want to make.
Sliced bread (I love Udi's for this, great texture and holds up well.)
Organic Fresh Goat Cheese
Organic Fresh Tomato, sliced
Organic Fresh Basil, chopped
Extra Virgin Olive Oil
Salt and Pepper to taste
What to do:
Lightly toast bread
Spread with goat cheese, it is okay if it is not spread perfectly. Gluten free bread can be delicate and may tear with too much spreading..
Top with tomato slice
Sprinkle with basil
Sprinkle with salt and pepper to taste
Drizzle with olive oil

Summer Lemon Rice
What you need:
2 Cups Jasmine Rice (Cooking instructions will vary depending on the rice for our recipe we used Lundberg Organic Rice)
1 Fresh Lemon
1/2 English Cucumber, sliced thin
Salt and Pepper to taste
What to do:
Cook rice according to package instructions
When rice has finished cooking, add in the juice of one lemon.
Using a grater, grate the rind of half the lemon. (Wash lemon well! Be careful to only grate yellow of the lemon rind, as the white has a bitter flavor.)
Add in grated lemon rind, sliced cucumber and salt and pepper to taste then combine well.
Serve slightly warm. Garnish with cucumber slices and lemon wedges.
