I want to share some favorite moments with you from this wonderful 2 months we had in Spain and Shanti Som! I am very happy for being able to share my experience with everyone! :)
A challenge or a small victory?
Challenge (n.) - something that needs great mental or physical effort in order to be done successfully and therefore tests a person's ability.
If we all agree that this is the definition of a challenge, then yes, I had encountered many, many challenges during my internship! Some bigger than others, and in this post, I want to share one of them with you.
Looking back and reflecting on my experience, I can see that one of the biggest challenges for me was to being able to speak in front of an audience. It may seem very odd to some of you, if you are naturally a good speaker and generally an assertive person. However, if there are introverts who are reading this right now, I think they can relate to what I am trying to explain! :) Our profession, as health educators, involves a lot of communication with different kind of people, and it wouldn’t matter if you are the most knowledgable professional out there, if you cannot communicate your message to these people. For example, let’s take the health talks we did. There is a group of people, who expect to learn something useful, some kind of an information concerning their health from you. Your goal is to present this information in a way that it will be easily understood by everyone. You might agree that being well prepared, speaking loud and clear and not getting nervous that you forget everything, are some of the things that will definitely help you for achieving this goal! I can tell you that I wasn’t born a good speaker :D, so I had to channel my best abilities and skills to carry out a good discussion. As they say, practice makes perfect, and my case was not an exception. I became more and more confident as time passed, and I can happily state that I turned this challenge into a small victory! Now, I feel more confident, talking in front of a group and audience, with the experience I had back in Shanti som!
Helpful tips for future interns
Once you have decided where you want to go and in which area you want to work in, start with formulating your CV, cover letter and start with looking for places! The sooner the better :)
As Desi already mentioned in her post, calling the potential internship places, if you don’t get any response, might save you lots of time and frustration! So be brave and just call!
Communicate your objectives clearly to your supervisor and stick to them! It is surely helpful to be flexible but don’t lose focus of the reason you are there!
Take the initiative and don’t be afraid to speak up! Showing enthusiasm and being proactive was essential for us, since we did create and manage a lot of activities entirely by ourselves.
Be prepared for a lot of nutrition and physical activity related questions! Especially, if you are interested in interning in a retreat, where you will have a lot of one-on-one communication with clients. In our case they were very curious and came up with quite challenging questions sometimes. You cannot go wrong with being informed about recent studies and refreshing your knowledge!
Do what you preach! You advocate healthy eating and an active lifestyle? Then live it! Lead by example and let your actions do the talking sometimes! Since we were spending a lot of time with detox clients, we needed to try out detox for ourselves, which really helped us in our further communication with them.
Be culturally sensitive! Remember that you study intercultural sensitivity, communication and all that jazz in Module 1, and you think - when will I need all of this? Well, this time comes, believe me. Being aware that my idea of something might be different than other people’s, was quite helpful in various situations, especially in a place like Shanti Som, where everyday you meet people from all around the world. These skills help to convey your message in a way that it will be understood equally well from a diverse group of people. They came in handy, especially, during our health talks.
Consider doing your internship together with a friend! We made a good team with Desi, contributing with our strengths, and helping each other with challenges.
Be open to new concepts, approaches and activities. Not everything you will see or experience is taken from a text book or study!
Enjoy your time, create memories and make friends! It will be an experience which will change you and you will take a lot from it!

As I mentioned in my previous post, part of our tasks for fullfilling one of our objectives was interviews with the team members. Here’s the interview with the personal trainer of Shanti som - Javier! He is talking about his career, work in Shanti som, our work together as a team!
An interview we had with Vicky - the nutritionist of Shanti som. Having an interview with the retreat’s team was one of the tasks of our learning objectives, and we thought that it is going to be interesting to record it, as well! She is talking about her perspective on nutrition and health, methods and approaches which she is using ih her work, our work in the retreat, and much more. If you want to see an insight from the work of a “nutricoach” press play and enjoy! :)

The interview with our supervisor and manager of Shanti som - Christine. It is a longer video because we did a double interview with Desi, and we had many questions to ask! Learning Objective I - Working with PA programmes, considering the needs of clients

Learning Objective II - Learn how well-being retreat is managed and what skills and competencies are required
Key strategies:
Observing the PT, yoga teachers, nutricoach and chefs in the hotel
Interviews with the Shantisom team
Helping the retreat team in organaxing and facilitating their classes
Making videos and photos, considering the confidentiality of staff and clients
Learning Objective III - Assess nutritional quality of clients’ diet and work to improve the clients’ food and health self-management
Key strategies:
Assessing the diet of individuals using health questionnaires
Using the 24h diet recall or 3 day food record to assess individuals’ diet
Promoting and helping with the preparation of healthy, balanced meals and detox juices
Health commucation with the participants of the retreat’s programmes
Assisting with the formulation of individuals’ meal plans
Learning Objective IV - Practice coaching tools and methods to inspire and engage clients in sustainable healthy lifestyle changes
Key strategies:
Observing and assisting the nutricoach
Facilitating coaching sessions, if possible, with the clients
Inspire sustainable lifestyle changes using different coaching theories and methods
Practising empathic listening, goals setting, and creating action plan for achieving clients’ desired goals
Learn new methods and tools practiced by the nutricoach
This is the last week of my internship period and I have mixed feelings about leaving Spain, Shanti som and my life here. I am excited for coming back to new challenges at school, meet my classmates and exchange our knowledge and experience, on the other hand, I feel that Shanti som still has a lot to offer, and I will be missing the team and my work here! Here is a video of me and Desi refecting upon our learning objectives. I am very happy to see that we have achieved all of them! Every day I have been definitely learning something new, about nutrition, about physical activity, and I must admit that I have learned a lot about myself, too!

I like your circuit. It should be really nice to do it in a such a wonderful surrounding area. Was it you who designed the circuit?
Thank you Irma! :) Yes, we have designed it. That’s just one example, we did many more.
Crackers!
This guy is Mukesh, the head chef at Phuket Cleanse, who makes delicious foods every day. He has taught me a lot about raw-vegan cooking.
As I mentioned on my previous post, I am a big fan of the veggie crackers, made from flaxseeds, sunflower seeds and vegetables.
Here they are in the dehydrator waiting to become crispy, together with some nut balls for dinner.
If you don’t have a dehydrator you can make them in the oven at the lowest temperature for about 15-20 min or until crispy :)
I’m definitely making them at home!

A circuit we do as part of the activities we prepare for the guests! They enjoy exercising outside, especially when the weather is nice! :)
We always go through each exercise before starting the circuit, and we assist them while they are doing it, correcting their technique if necessary.

Explain and reflect upon how you work with learning objectives. Describe a specific challenge that you solved and what you did to overcome it. Reblog from your peers. My detox story
Great post Ayten:-) It sounds like a great experience with the detoxing, but it also sounds like a lot of work and preparation to be successful. I have been thinking of doing my own little detox after this internship period, maybe you can advice me!
Thank you Anette :) Yes, I have never tried detox or juicing before, so it definitely was something new and interesting for me! That’s true, it does need preparetion, and I will be happy to advice you :)
My detox story
Detox (n.) - a process or period of time in which one abstains from or rids the body of toxic or unhealthy substances; detoxification.
Being an intern in a retreat, where guests are coming mostly for detox, implied that me and Desi also needed to try the detox programme out. Prior to arriving to the retreat, guests recieve a pre-detox guide, containing information about how they should eat in order to prepare their system for the upcoming days of only juice consumption. We did not follow the pre-detox guide step by step, one of the reasons why is that our diet with Desi is mainly consisting of healthy foods.
On Monday the 2nd was our fisrt day. As always, we started work at 9:30, one of us preparing the enemas, and the other the juices fot the detox clients. This time, we prepared 2 extra juices :) Usually, what guests are advised to do is to drink lemon water fisrt thing in the morning, then scrape their tongue wih tongue scraper, brush their teeth, and afterwards, dry brush their body, to get rid of all the dead skin cells and stimuate the lymphatic system, before taking a shower. At 9:00 they have yoga, and after that they come for their first juice at 10:30. We followed every step described, except the yoga :)
Probiotic and psyllium with water are taken with the first juice. Those suppements aid the detoxification process, and psyllium also gives the feeling of satiety. We do not recommend any demnding physical activity during the detox, simply because the body is in a great caloric deficit, and any demanding physical activity could be potentially harming. Instead, yoga is recommended, not only because it is not taxing on the body, but also it can further stimulate the detoxification process. However, our case with Desi was slightly different because we still needed to work; teach some of the classes, and do circuits. I even went for a hill run with one of our guests during my first detox day, which was still okay, because I most certainly had some glycogen stored in my liver and muscles from the previous day’s meals :)
After the first juice at 11:00, it’s time for enema. It is prepared with distilled water and organic coffee, and according to Gerson therapy certain substances in the coffee stimulate an important detoxification enzyme in the liver as well as dilate the bile ducts and increase the flow of bile (link).
Second juice is served at 12:30, along with shot of 100% aloe vera juice, another wonderful supplement that aids the detoxification process. At 14:30 is the third juice with another shot of aloe vera. And the last juice is served at 17:30, with chia seeds and aloe vera. As you can see, juices are 2 hours apart, each of them are prepared just right before consumption (in most occasions by yours truly :D)
I didn’t feel hungry during the day at all, which was quite surprising, considering that my intake was almost 80% lower that usual. The evenings were the most challenging because this is the time when we come home, and what we do is plan and prepare our dinner. But being on the detox, we had only vegetable broth with psyllium. It was not as bad as it sounds, quite okay actually, however as a person who likes to cook, and eat, I cannot say I was really satisfied! :D My water intake doubled; I drink 2 - 2,5L water daily, and during detox I was drinkin 4L a day. We encourage clients to drink plenty of water as well, for plenty of reasons, e.g. avoid headaches.
Overall, I lost 2kg for 4 days, most of it I believe was water weight. Being in a detox (juicing or eating fresh vegetable and fruits) might have numerous beneficial effects on your mental and physical well-being. It was a nice break for my GI tract, and the timing couldn’t be any better - just at the beginning of spring. It helped me to be more mindful while eating, not getting distracted, and being aware of how do some foods affect my body. Also, I noticed that it helped me think more clearly. Some people even share that they get some life changing ideas while detoxing!
Before leaving the hotel, guests recieve a post-detox guide, where they find information about post-detox diet. They should slowly reintroduce foods, beginning by lighter versions, and choosing whole, unprocessed options. Me and Desi were eating mainly vegetable soups and purees, vegetables and fruits for couple of days. My calorie intake increased by 30%, and I slowly upped it to my normal intake. We slowly began introducing different proteins, legumes, wholegrains and fats. It was interesting to observe how my body reacted to some of the foods.
