No heat required for this quick, one bowl dinner! It’s so so tasty, and includes a homemade vinaigrette 🙌🏼 Recipe below! 1 cup bulgar wheat, soaked in 1 cup water overnight 1 shallot, thinly sliced Salt and pepper 1 Tbsp Dijon mustard 1/3 cup lemons juice 1 cup extra virgin olive oil 1 seedless cucumber 2 Roma tomatoes 1 avocado 1 cup chickpeas 3 bell peppers, halved and seeded 1. Put the shallots in a bowl with the salt and pepper. Let it sit while you chop the cucumber, tomato and avocado. 2. Add the mustard and lemon juice into the bowl with the shallots. Slowly stream in the olive oil while mixing. 3. Toss in the bulgar wheat and veggies. Check for seasoning! 4.
