Kale strawberry chicken salad with flaxseed, blueberries and chia seeds.
Cucumbers with tuna salad(tuna,celery,mayo,mustard) to go.
Spaghetti Squash Quiche with green beans and ham.
I love my pork, granted not the healthiest choice of meat, but had a hankering for some finger-licking ribs. Delicious !!!!

It's been awhile since I posted, but I'm back ! Today's dinner, baked tilapia, boiled cauliflower with scrambled eggs, steamed zucchini and spaghetti squash with green beans and kale. For dessert, fresh blueberries, strawberries, cherries and watermelon (not shown). It was delicious!
I was making this like lasagna but it turned out looking like pasta! As long as it taste good right? I used quinoa pasta and ground turkey. Layered it, sprinkled cheese on top and stuck it in the oven for acouple of minutes. I don't what it is about quinoa but it's always extra filling! 452 calories Fat: 12.5g Sugar: 10g(depending on the sauce you use) Protein: 28g
Beef & Broccoli
Oh my gosh, these meatballs. I based them on this recipe for Meatballs alla Parmigiana from I Breathe I’m Hungry. I used extra lean ground beef and half ground turkey and left out the onion to cut the calorie count to 70 calories per meatball. Despite the lower fat they are still so, so tender.
For three meatballs, that’s: 209 calories, 12.3g fat, 1.3g net carbs, and 21.4g protein.
I topped them with some of Rao’s Tomato Basil marinara and stuck them under the broiler with some shredded provolone and mozzarella. Served over spaghetti squash, this meal was around 318 calories. I’ve served these over chopped spinach and they were equally enjoyable.
I would have this for brunch but my husband has it for his breakfast. Eggs topped with smoked salmon, turkey bacon, hash browns and avocado. 450 calories 3.8g sugar 19g protein 33g fat (keep in mind 1/3 of that is from the avocado which is good fat) so enjoy it! :)
I thought broccoli and cauliflower would beat spinah, but apparently I was wrong! Spinach for the keto-win!
Cauliflower Pizza Casserole
Yesterday's dinner. Fried rice/quinoa and baked eggplant. Textures turned out just right. 👌🏻
You guyssss I made cheese chips!
1. Preheat oven to 350 F. 2. Lay parchment paper on a baking tray. (MUST be parchment paper, not aluminum foil, or else it will not work!) 3. Scoop a teaspoon of pre-shredded cheese onto parchment paper and space the lumps of cheese about 2 inches apart. (Need to give them room to expand.) 4. Bake in oven for approximate 8 minutes or until crispy. 5. Serve with guacamole or any dip of choice, or enjoy alone! :)
