This recipe for All-American Quinoa Cheese Sliders is a healthy take on an old favorite. They are healthy and tasty because they have quinoa and a zesty lemon aioli. Great for a family meal or a party!
Ingredients: 1 cup cooked quinoa. 1/2 cup grated cheddar cheese. 1/4 cup finely chopped onion. 1/4 cup breadcrumbs. 1 egg. 1/2 tsp garlic powder. Salt and pepper to taste. 12 small slider buns. Lettuce leaves. Sliced tomatoes. Sliced pickles. For Lemon Aioli:. 1/2 cup mayonnaise. 1 clove garlic, minced. Zest and juice of 1 lemon. 1 tsp Dijon mustard. Salt and pepper to taste.
Instructions: To make the dish, put cooked quinoa, grated cheddar cheese, chopped onion, breadcrumbs, egg, garlic powder, salt, and pepper in a large bowl. Mix everything together well. Make the mixture into small patties about 2 inches across, about the size of sliders. Put the grill or pan on medium heat and lightly coat it with cooking spray or oil. Make the quinoa cheese sliders. Cook them for three to four minutes on each side, or until they are golden brown and the cheese melts. Make the lemon aioli while the sliders are cooking. In a small bowl, mix the mayonnaise, minced garlic, lemon zest, lemon juice, Dijon mustard, salt, and pepper. You can lightly toast the slider buns on the grill or in a toaster after cutting them in half. Put a lettuce leaf and a tomato slice on the bottom half of each bun to make the sliders.
