Meet one of our new favorite go-to dinners! We all love it, including our toddler who gets super excited and usually asks for seconds....
It’s been a while since I wrote in...I’ve turned to Pinterest for recipe logging. We made this tonight, though, and it was pretty good! Very “southwestern-y!”
Chick Peas and Tomatoes Over Rice 1 28 oz can crushed tomatoes 1 14 oz can diced tomatoes 4 to 5 cloves of garlic, diced 1 head of kale, finely chopped 2 14 oz cans of chickpeas , drained and rinsed oregano, garlic powder, onion powder, and cumin to taste brown or wild rice, cooked as directed in a separate pot Add tomatoes, spices, and chick peas to a large pan on medium heat. Simmer until hot throughout. Add chopped kale and cook until tender. I added 1/4-1/2 cup of water during cooking to keep the sauce looser. Serve over brown rice or with toasted bread.
Easy Vegetable Minestrone http://www.littlespicejar.com/homemade-minestrone-soup-slow-cooker/ I omitted several of the ingredients (celery, tomato paste, pesto, bay leaves, parmesan-obviously, zucchini, rosemary) and I subbed kale for spinach. I made these changes based on what we had in the fridge and cabinet...so you could modify and add as needed. Served with lightly toasted bread, this soup was easy, filling, and hearty! Even a hit with the non vegans!

Sometimes the healthiest of meals come from all the separate dishes you've made. This dish is a combination of basmati rice and white beans from last week, marinated vegetables from the kabobs we made yesterday for the grill, and several handfuls of kale. For dressing, I used the remainder of the balsamic marinade we used on the vegetables (balsamic vinegar, basil, garlic powder), ground flax, and nutritional yeast. Best part? It keeps all that food from being wasted!

Tortilla Pizzas whole grain tortillas (I use Ezekial brand) pasta or pizza sauce toppings of choice (I used spinach, arugula, onions, and mushrooms) basil, oregano, garlic/garlic powder Cover the tortilla with pasta sauce and veggies. Shake herbs on top. Bake in the oven for approximately ten minutes on 400 degrees. It's THAT easy! :)
A friend of mine recently shared the recipe for Depression Cake with me and, after eating half of her cake, I decided to make one of my own. This cake was made during the Great Depression when eggs, milk, and butter were hard to come by. It's unintentionally vegan and absolutely delicious! After stirring, the chocolate melted and it was soft enough to pour over the cake. Fair warning, the icing makes this cake extremely rich. You may enjoy it without the icing more!
