#testkitchen #quarantinecooking Tofu “ Not Chả Cá ” — I adapted this Hanoi fish specialty into a vegetarian version with a couple of slight changes (substituting garlic scapes for spring onions, and yogurt for the sour fermented rice used in the marinade, plus used normal steamed rice instead of vermicelli). The result was really fabulous. The tofu took on all the flavor of the galangal, turmeric, shallot, and garlic wonderfully, and the contrasts between each element were pronounced.
