Lahanorizo, a traditional Greek dish, combines rice and cabbage with flavorful herbs and spices. This vegan version retains all the savory goodness without any animal products, making it a hearty and satisfying meal.
Ingredients: 1 cup rice. 1 small cabbage, shredded. 1 onion, finely chopped. 2 cloves garlic, minced. 2 tomatoes, diced. 3 tablespoons olive oil. 1 teaspoon dried oregano. 1 teaspoon dried thyme. Salt and pepper to taste. 3 cups vegetable broth. 1 lemon, juiced.
Instructions: Put olive oil in a big pot and heat it over medium-low heat. Put in the garlic and onions, and cook them until they get soft. Shred the cabbage and add the tomatoes, dried oregano, and thyme. Let the cabbage wilt while you cook it. Mix the rice with the oil and vegetables after adding it to the pot. Add the lemon juice and vegetable broth. Add pepper and salt. Bring to a boil, then turn down the heat. Cover and let it cook on low heat for 20 to 25 minutes, or until the rice is done and most of the liquid is absorbed. Use a fork to fluff the rice when it's done, and serve it hot.
